Granny's Peach Cobbler Pie




































I will punish the world for its evil, and the wicked for their iniquity; I will put an end to the pomp of the arrogant, and lay low the pompous pride of the ruthless.  - Isaiah 13:11



2 deep dish pie shells


Filling

1 regular size can peaches in juice, must be drained well

1 jar Costco peaches, must be drained well 


1 c white sugar

1/2 t cinnamon 

1/4 t nutmeg

1 T fresh lemon juice

1 T vanilla 

Mix these ingredients and add to peaches.


1/2 c AP flour

1 t melted butter


Add butter first to peach mixture, stir, then add flour, incorporate well.


1 beaten egg to gaze top crust


Bake 350 preheated oven for 55 minutes.

After 30 minutes cover crust to prevent over browning.

So Moist Banana Pecan Muffins

Toast and chop 1 c Pecans, set aside.


Wet ingredients 

3 mashed bananas, medium size

1/2 c Mayo

1 beaten egg

1/8 t cinnamon 


Mix these well.

Set aside.


Dry ingredients 

1 & 1/2 c AP flour

1 t baking soda

1/2 t salt

3/4 c sugar 


Mix in a separate bowl.

Add to wet ingredients.

Mix just to incorporate.

Add in Pecans.

Add into lined muffin pan.


Preheat oven 350 degrees and bake 16 minutes or until toothpick comes out clean.

Three Cheese Mardi Gras Chicken Stuffed Cubanelle Peppers

An ej original recipe!


6 cubanelle peppers, toasted over open flame, seeded and cut in half 
Left over Mardi Gras chicken thighs, shredded
4 scallions
1 T roasted garlic
3 T chopped cubanelles
Drizzle of olive oil
Guajillo sauce (recipe below)
Quesadilla cheese
Manchego cheese
Cojita cheese

Sauté scallions, cubanelle pieces, and garlic in oil, add chicken. 
Cook 5 minutes, add 1/4 c of guajillo sauce  stir and cook 1 minutes.
Turn off heat.
Place a light coating of sauce in bottom of 13x9 pan.
Place peppers in sauce, add filling, 3 cheeses and drizzle with remains sauce.
Bake 350 degrees preheated oven for 30 minutes.
Add fresh cilantro.

Artisan Flatbread Bacon Sun Dried Tomato Onion Pizza




























This was delicious!!

29 For anyone who eats and drinks without discerning the body eats and drinks judgment on himself.
30 That is why many of you are weak and ill, and some have died. - 1 Corinthians 11:23-30



Artisan Flatbread pizza ( got mine at Aldi in the bread isle)
Fried crisp bacon, crumbled 
Onion, sliced thin
Smoked Gouda, grated 
Sun dried tomatoes 
Cotija cheese

Top Flatbread with toppings.
Bake until slightly crispy.

Crushed Cheese Curl Salmon Patties







































7 for we brought nothing into the world, and we cannot take anything out of the world.

An ej original recipe!


1 can salmon, drained
Fresh Lemon juice
1/2 t Mardi Gras seasoning 
1/4 t Dry mustard
1/4 t Garlic
1/4 t Dried cilantro 
4 Scallions
1/4 c Mayo
1/2 c Crushed cheese curls

Mix well.
Shape into patties.
Roll in panko and freeze 15 minutes.
Fry in clarified butter!

1 c Panko 

2 T Clarified butter for frying
