Quick Chicken Nugget Stir Fry

This was easy and delicious!
It only took about 15 minutes.



10 Frozen chicken nuggets or fresh nuggets from fast food
2 T Olive oil

Stir fry chicken on medium heat and chop up.

Add these ingredients to fried chicken.
1 matchstick cut Carrot
1 thin cut sliced Onion
1/2 c sliced Cabbage
1 c small Broccoli florets
2 T Soy sauce
2 T Saki 
1 t Toasted sesame oil

Serve over sticky rice.
I also served with spring rolls.

Italian Orzo Salad

1 c uncooked Orzo, bring salted water to boil and add Orzo, boil on low 10-12 minutes

Dressing
1/8 c Olive Garden Italian dressing
2 T mashed roasted garlic

Heat 30 seconds.
Set aside.

Add these to mini processor and pulse until you get a paste like mix
1/4 peperoncini 
2 T capers
Add these to the warm dressing.

Veggies
1 large can sliced black olives, drained
1 small English Cucumber, chopped
1/2 c sun dried tomatoes, chopped
1/4 c raisins
1/4 c fine grated Parmesan 

Add dressing to Orzo.
Stir in veggies, cheese and raisins.

Authentic Pork Carnitas
































The carnitas recipes vary by region.

2 lbs Pork butt, cut into chunks, fatty pork is best
1/2 t cinnamon 
1/8 c olive oil
1 T roasted Garlic 
1 T Salt
1/8 c Eagle brand condensed milk
1/2 small can Coke
Water to cover
Cover, bake 1-1/2 hrs on 400 degrees.
After 1-1/2 hours, may need to add more water if pork isn't tender enough and cook 30 minutes longer.
Crisp up in oven with lid off or on flat top.
The toppings are a must!!
This is on the sweet side in taste so it needs the saltiness of the cheese, the heat from salsa, the freshness from cilantro and the bite from the onions.
Chop, serve on fire roasted flour tortillas with fresh chopped cilantro, sliced red onions, crumbled Queso Fresco and salsa verde

Fried Eggplant Smashed Sirloin Sliders

What can I say, delicious!! 
The taste is like a fried green tomato on a burger!



Sirloin meat, enough for 2 burgers, season with seasoned salt
Drizzle of olive oil
Toasted Slider Buns, I used Publix bakery dinner rolls
Fried eggplant 
Thin sliced Tomatoes and onions
Yellow mustard 
Melted Cheese placed on bun, I used sharp white cheddar

Mash the seasoned burgers, you want them to hang off buns. 
In a skillet, on medium high heat, fry in oil.
Heavily weigh down foil covered patties with a press or small cast iron skillet.
They cook really quickly. 
Assemble with trimmings!

MiMi's Chicken and Orzo Pot Pie

An ej original recipe!


2 boxed fresh regular pie shells, keep cold.
Makes 2 12x7 pans, I get mine from Sam's club

1/4 c Orzo, cooked al dented and set aside

Filling
2 Rotisserie chicken breast
1 can Cream of chicken soup
1/4 c cream
1/8 c milk
1/2 c water
1 can 5 oz. evaporated milk
1/2 t dried rosemary
1/2 t dried thyme
1/2 dried sage

Veggies
1 c Green English Peas, frozen
1c fresh baby Spinach
1/2 c Leeks,chopped 
1/8 c Celery, chopped 
1 Carrot, sliced thin
1 t clarified butter

Sauté veggies in butter until tender.
Add chicken, soup, cooked Orzo, seasonings and wet ingredients.
Cook until slightly thickened.
Set aside while doing crust.

Right before use, cut shells in half. 
Place half in bottom of pan.
Lightly brown in a 350 degree oven, bottom rack.
Fill, cover with top crust, do 3 slits in top.
Bake 20 minutes or until crust lightly browns.
