Pan Seared Greek Parmesan Crusted Tilapia


































16 Moreover, I saw under the sun that in the place of justice, even there was wickedness, and in the place of righteousness, even there was wickedness.

Buy a fish spatula! 
They are awesome and keep the fish from falling apart while you remove it from the pan.

Fish 
6 Tilapia Fillets, I buy frozen ones from Sam's
Lemon chunks
Greek seasoning
Salt/pepper

Place thawed Fillets on a plate and squeeze lemon over, then season.

Dredge stations
Do in this order
1. Flour
2. Beaten egg
3. Panko, season with Greek seasoning and salt and pepper, add Parmesan 

Fry station
2 T Clarified butter
1 T olive oil

Heat fry mixture to medium high heat, add 3 Fillets at a time. 
Do not turn until the fish has fried to crispy on the side that's down, 2-3 minutes. 
Using a fish spatula, flip and repeat.
The fish should have a crispy outside and a flaky inside.
Serve on top of Orzo.

Sriracha Honey Mustard

Equal parts of:
Yellow mustard
Dukes Mayo
Honey
Sriracha, I used 1/2 as much because I didn't want it scorching

Whisk together until incorporated and smooth. 
Perfect for sausage balls, chicken fingers, burgers, hot dogs etc.!

Really Delicious Chicken
































For "everyone who calls on the name of the Lord will be saved." - Romans 10:13



I based this on the Marry Me Chicken Recipe!

1 T olive oil
8 chicken Tenderloin, cut length wise so it's thin, salt and pepper both sides

1. Using a large cast iron skillet, sear seasoned chicken in oil.
This should take about 4 minutes.
Remove chicken to plate.

3 T roasted garlic 
1 t dried thyme
1/2 t red pepper flakes
1/4 c leeks, sliced

2. Heat pan to medium.
Stir bits.
Add garlic, thyme, leeks and pepper flakes to pan.
Cook 3 minutes.

3/4 c water
1 T chicken base seasoning
1/2 c Pet milk

3. Next add water and base seasoning, cook 2 minutes, then add Pet milk.
Cook another 2 minutes.

1/2 c sun dried tomatoes in oil, rinsed
1/2 c Parmesan Reggiano
1 t dried sweet basil

4. Add rinsed sun dried tomatoes, cheese and basil. 
Add chicken back in.
Spoon sauce over chicken.
Add to oven and cook 15 minutes.

Easy German Chocolate Brownie Bites

2 boxes Entenmann's Brownie Little Bites
Can of German Chocolate Coconut Pecan Frosting ( I used Betty Crocker) 

Open brownie bites packages and set in a plate.
Open frosting, stir well.
Add 1/2 teaspoon of frosting to each bite.
Serve!

Pan Seared Yellowfin Tuna

2 Yellowfin Tuna steaks, mine were about a pound and a half total
Blackening seasoning( I used Old Bay with blackening seasoning )
Salt 
Pepper
Olive oil
Worcestershire sauce

Let steaks sit out about 15 minutes.
Rub with oil, season with salt and pepper, then Old Bay.
I went light on the Old Bay but you can go as heavy as you wish.
Heat a skillet, with a tablespoon of oil, to hot on high temp.
Add Tuna and let it sit in hot pan until you see the color changing up the side to a grayish color, then flip.
Repeat.
Add a tiny splash of Worcestershire sauce on each side.
We like ours medium so the grey went about a quarter of the way up on both sides.
It was just pink in the middle.
