Buy a fish spatula!
They are awesome and keep the fish from falling apart while you remove it from the pan.
Fish
6 Tilapia Fillets, I buy frozen ones from Sam's
Lemon chunks
Greek seasoning
Salt/pepper
Place thawed Fillets on a plate and squeeze lemon over, then season.
Dredge stations
Do in this order
1. Flour
2. Beaten egg
3. Panko, season with Greek seasoning and salt and pepper, add Parmesan
Fry station
2 T Clarified butter
1 T olive oil
Heat fry mixture to medium high heat, add 3 Fillets at a time.
Do not turn until the fish has fried to crispy on the side that's down, 2-3 minutes.
Using a fish spatula, flip and repeat.
The fish should have a crispy outside and a flaky inside.
Serve on top of Orzo.
