Yucatán Pork Salsa Verde Pozole

1 c or more Left over Yucatán pork, recipe this blog under Mexican tab
1 t Olive oil 
1 t clarified butter
1 t toasted cumin
1 T sugar
1 t sumac or squeeze of lime
1 t smoky paprika
2 T chicken base seasoning
3 T chopped roasted poblano
1 sliced onion
1 Zucchini, peel and chunked 1/2 inch
1 can hominy, drain
1 ear of fresh corn, shaved off
6 c water
2 T half and half
1/4 c salsa verde 
1 t Adobo sauce ( from a can of chipotle in adobo) 
1/4 c cornmeal 
3 T fresh cilantro 
3 T fire roasted salsa, recipe this blog under Salsa tab

Add oil and clarified butter to Dutch oven, heat, add seasonings to bloom for 2 minutes, stirring constantly.
Add onions, Poblanos, pork, and hominy.
Stir until seasoned.
Add water, cornmeal, corn, Adobo sauce, half and half, salsa verde and Zucchini.
Boil on medium for 5 minutes. 
Add Cilantro and salsa.
Turn heat down to a low boil for 20 minutes.
Serve with sliced radishes, fresh onions or picked onions, cheese, sour cream, lettuce or shredded cabbage, salsa and tortillas or corn chips.
Delish!

Fire Roasted Tomato Salsa

1 can fire roasted tomatoes, drain but reserve juice 
2 T roasted garlic
1/2 c chopped fresh cilantro 
1/4 c fire roasted poblanos, I keep these in the freezer, I roast mine on my gas range open flame
1/2 t sugar
1/2 t salt
1/2 t vinegar
Juice of 1/2 lime


Process Cilantro and Poblanos in mini food processor, add tomatoes and all seasonings.
It will look like pulp.
Pour into bowl and add vinegar, juice and as much of the tomato juice as you wish.
Deep smoky flavor, delicious!

I served it on a Yucatan Pork Quesadilla! So delicious!

Yucatán Pork Mexican Pizzas

Left over Yucatán shredded pork (recipe this blog)
Crispy fried corn tortillas 
Bean dip
Pickled onions
Fresh Poblano sauce
Cheese
Lettuce

Spread warm bean dip on tortillas, add warmed pork, lettuce, pickled onions, sauce, lettuce and cheese.

Strawberry Cake Like Scratch

































19 But you, O LORD, reign forever; your throne endures to all generations.

If you love scratch cakes, this ones for you.
Takes like you took hours making but it was just a few minutes!!!

1 Duncan Hines Classic White Cake Mix
1 small box strawberry jello, 3 oz.( I used Aldi brand)
4 eggs, beaten
1 c olive oil
1/4 c water
1 c mashed fresh strawberries

Mix cake mix and powdered jello mixture together with a whisk.
With a wooden spoon stir in eggs, water and oil.
Then gently stir in mashed strawberries.

13x9 pan 350 degree preheated oven 35-45 minutes or until toothpick stuck in middle comes our clean.
Bake.
Cool before glazing.

1/2 stick cream cheese, softened
1/4 c butter, softened 
1 c powdered sugar
1 t vanilla 
1 T milk

With hand held mixer, whip cream cheese and butter. 
Add powdered sugar, vanilla and milk. 
Using mixer, whip until incorporated. 
If too thick add 1/2 t milk.
Spread on cooled cake.
Cover.
Refrigerate.

My Take on Yucatán Style Citrus Pork Street Tacos




































12 Therefore, just as sin came into the world through one man, and death through sin, and so death spread to all men because all sinned-

Saw this on Cook's Country!!
Made some changes according to what I had on hand!

Tortillas, soft, crunchy or black bean tostado chips

3 lb country pork ribs cut into chunks
2 T oil
1/4 of a diced red onion, reserve rest for pickled onions
3 T roasted garlic
1 t toasted cumin
1 t oregano
1/2 t cinnamon 
1/2 t  allspice 
1/4 c tomato paste concentrate 
1&1/2 c water
1/4 c orange juice
2 T white vinegar
1&1/2 T Worcestershire sauce
5 bay leaves
2 t sea salt
1 t black pepper

Heat oil to medium,add onion and slightly brown.
Add cumin, oregano, allspice and cinnamon.
Bloom spices in oil-onion mixture for 30 seconds.
Add garlic to mixture.
Add tomato paste to heat and stir.
Next add water, oj, vinegar, Worcestershire, salt, pepper and bay leaves.
Cook until slightly thickened.
Add pork.
Cook in a 325 degree oven, uncovered for 1 hour and 30 minutes.
Then for an additional 30 minutes bump up heat to 425 degrees.
Remove bay leaves, mash with potato masher.
On medium heat, cook until some of juice is dissipated.  
To finish add 1 T white vinegar.

Serve on tortillas with pickled onions and habanero sauce.

Pickled onions
3/4 of red onion, thin sliced with mandolin 
1 c white vinegar
1/3 c sugar
1/4 t salt

Bring to boil.
Pour over onions.
Refrigerate.  

Roasted Poblanos sauce 

1/2 c water
1 chopped tomato
1/2 chopped carrot
1/2 of a roasted poblano, seeded and chopped
1/4 c onion, chopped
1 T roasted garlic
1/2 t salt
1/2 t pepper
Pinch of sugar

Boil 10 minutes, cool for 10 minutes.
After it cools, add 1 T vinegar and 1& 1/2 t lime juice.
Reserve juice to add back in if needed.
Spoon veggies into a mini food processor, process until it's a pulp.
Add some juice if needed.

Typical  Toppings
Pickled red onions
Poblanos sauce or Habanero sauce

We added cheese and lettuce!
So very delicious!
