Sumac Corn on the Cob


































5 You have multiplied, O LORD my God, your wondrous deeds and your thoughts toward us; none can compare with you! I will proclaim and tell of them, yet they are more than can be told. 
6 In sacrifice and offering you have not delighted, but you have given me an open ear. Burnt offering and sin offering you have not required. 
7 Then I said, "Behold, I have come; in the scroll of the book it is written of me: 
8 I delight to do your will, O my God; your law is within my heart."  - Psalm 40:5-8




4 ears fresh Sweet corn, I got mine at Aldi
Sumac
Seasoned salt

Microwave corn on a plate covered 2 minutes each side.
I could fit all 4 ears on the plate.
Delicious!

Sumac Spiced Roasted Chicken
































5 Consequently, when Christ came into the world, he said, "Sacrifices and offerings you have not desired, but a body have you prepared for me; 
6 in burnt offerings and sin offerings you have taken no pleasure. 
7 Then I said, 'Behold, I have come to do your will, O God, as it is written of me in the scroll of the book.'" 
8 When he said above, "You have neither desired nor taken pleasure in sacrifices and offerings and burnt offerings and sin offerings" (these are offered according to the law),
9 then he added, "Behold, I have come to do your will." He does away with the first in order to establish the second.
10 And by that will we have been sanctified through the offering of the body of Jesus Christ once for all.
11 And every priest stands daily at his service, offering repeatedly the same sacrifices, which can never take away sins.
12 But when Christ had offered for all time a single sacrifice for sins, he sat down at the right hand of God,
13 waiting from that time until his enemies should be made a footstool for his feet. - Hebrews 10:5-13



1 organic whole chicken, spatchcock chicken, bought mine at Aldi
Olive oil

Optional but oh so good!!
Note: You can add some precooked potatoes in the water to cook under chicken.
Microwave whole potatoes for 3 minutes each side, cool, peel and slice into rounds.
Slice an onion and a carrot too.  
Carrots will be slightly crunchy.
Add 1 t salt to water.

Rub:
3 T Sumac
2 T Toasted cumin
1 T Smoked salt
A few turns of Cracked black pepper

Liberally oil chicken, both sides.
Liberally season chicken, both sides.

Preheated 500 degree oven, 55 minutes, middle rack or until breast is 165 degrees and thighs are 175 degrees.
Place on rack in pan with 1/2 c water in bottom.
Place spatchcock side up for 15 minutes, then flip chicken to breast side up.
Cook remaining time and check temp. 
This was so good.
The sumac gives a slightly lemon taste.
Served with sumac corn on the cob.

Beef Short Ribs over Spaetzle

Such a rich and delicious dish!


4 oz Spaetzle cooked according to directions
Set aside

Beef 
2 lbs Boneless short ribs, cut into 1 inch pieces
1 T Olive oil
1 Onion, sliced into chunks 
1 T roasted garlic
2 T  dried shallots
1/8 c Worcestershire sauce 
1/8 c light soy sauce
Pinch of Red pepper flakes
2 c water

Preheat oven 375 degrees.
On top of stove, in a Dutch oven, sauté onion and pepper flakes in olive oil, add beef, garlic and brown.
Add water, dried shallots, Soy and Worcestershire sauce.
Place a lid on and boil on medium heat for 15minutes.
Place in oven with lid for 45 minutes.
After done add:
Mix 1 c water and 1 Pkg brown gravy mix in a bowl and whisk.
Put in Dutch oven with the beef.
Put on stove top and heat just till thickened into gravy.
Serve over Spaetzle, mashed potatoes or rice.
I served mine over Spaetzle.
My sides were boiled cabbage and green bean casserole with cut fresh tomatoes, cucumbers and radishes. 

Cornmeal Hominy Chicken Soup
































Unless the LORD builds the house, those who build it labor in vain. Unless the LORD watches over the city, the watchman stays awake in vain.  - Psalm 127:1

2 c Rotisserie chicken breast
3 T Chicken base seasoning 
4 c water 
1/4 c Cornmeal
1/2 t fresh Sage 
1/2 t Thyme
1/2 t Rosemary
1 can Hominy
Cracked Black Pepper, a turn or two
1/4 t Sugar

Add water, chicken, chicken base and cornmeal to pan.
Stir.
Bring to a light boil and add herbs, sugar, hominy and pepper.
Simmer for 15 minutes, stir occasionally.
Serve with warm tortillas or crackers.

Honey Almond Cream Cheese Spread































23 Search me, O God, and know my heart! Try me and know my thoughts!

1 tub whipped cream cheese
1 T Honey 
1 t molasses
1 T brown sugar
1/4 t cinnamon 
1 T chopped smoked almonds

This is yummy.
To serve:
On warm bagels, biscuits, croissants or toast.
