Meatballs Sauvignon Blanc Gravy and Spaetzle

8 oz uncooked Spaetzle, it's an egg pasta, make and set aside, cook using directions. I used Black Forest style found at World Market

6-8 Meatballs, I make them and keep in freezer

5 button Mushrooms, sliced 
1 T roasted Garlic
1 T clarified butter
1/4 c Sauvignon Blanc
1/4 c Water
1/8 c heavy Cream 
Salt and pepper to taste
2 T Fresh cilantro 
1/2 t Rosemary 
1/2 t Thyme
1/4 c sour cream

Pour butter into skillet, add mushrooms, seasonings and garlic. 
Sauté until mushrooms get slightly soft, remove to a plate.
Add meatballs to drippings and sauté until done, about 10 minutes. 
I cut mine in half.
Add wine, sauté 5 minutes then add water and cream.
Sauté until sauce resembles gravy, then add sour cream. 
Sauté until the sour cream dissipates, remove from heat, then add Spaetzle.

Rich Ricotta Banana Pudding

Box of Vanilla wafers, Aldi has the best ones
4 large bananas
1 small box of instant cheesecake flavor pudding 
2 c whole milk
1/4 c ricotta cheese, Aldi Happy Farms full fat is delicious 
1 can eagle brand condensed milk
12 oz tub of cool whip

Whisk pudding, ricotta and milk together.
Add eagle brand, then 1/2 of the cool whip.
Start layer with wafers then bananas, repeat for a total of 3 layers. 
Top with cool whip.
Refrigerate over night to set.

Creamy Teriyaki Shrimp Sushi Roll

I'm so excited about how well these turned out.
I've been talking myself into this for months.
I've watched videos, read recipes and prayed for guidance in doing the rolls correctly. 
I have been granted success! 
They were delicious!

Your cut items:
Carrots thin strips
English Cucumbers cut into thin strips
Cream cheese cut into thin strips
Set aside.

Your protein items:
shrimp, marinated in teriyaki sauce and  
sauté in skillet with clarified butter
Slice into thin pieces.
Set aside.

Your rice item:
2 packages Trader Joe's frozen Jasmine rice, cook according to directions
2 t seasoned rice wine vinegar
Black sesame seeds

Nori ( I used Blue Dragon roasted seaweed sheets which I cut in half) 

Pour cooked rice into large bowl, one package at a time adding half of the vinegar.
Toss around with a flat wooden spoon. 
Repeat.
Set aside.

Cover sushi mat with plastic wrap.
Get a bowl of cold water.
Assemble your ingredients. 
Place Nori shiny side down.
Keep hands really wet as you work with rice.
Leave 1/8 inch on one end of Nori sheet.
Sprinkle with black seeds.
Flip over, gently press.
Layer filling in the middle end to end.
Do not overfill.
Roll and squeeze to pack, then roll and squeeze until it's in a roll shape.
Wet really sharp chefs knife and cut evenly in half, in desired size.
Serve with picked ginger, light Soy sauce and wasabi paste.
World market has all these ingredients except the shrimp.
I used frozen extra large shrimp and Teriyaki sauce.
I slightly thawed shrimp before cooking.
Do not overcook.
Next I will cook Asian Salmon and use that as my protein source.

Chicken in White Wine with Cipollini Onions Carrots and AndouilleSausage

6 Chicken, I used large tenderloin, seasoned with season salt, onion powder, smoked paprika, sage and rosemary 
3 T clarified butter
1 inch piece or more of Andouille, diced
Cipollini onions, boil water just to cover, remove from heat, add onions, leave 5 minutes (helps in removing skin to keep Onion together) 
3 Carrots, chopped
1 c White wine, I used Sauvignon Blanc

Preheat oven to 375 degrees.
Cook covered 30 minutes until chicken reaches 165 internal temp.

Heat clarified butter in Dutch oven.
Sear seasoned chicken.
Remove and set aside.
Add carrots, onions, and Andouille sausage to drippings.
Sauté 5 minutes then add wine.
Sauté another 5 minutes and add chicken back in.
Bake covered.
Bring chicken out and slice across the grain.
Return to Sauce, stir.
Serve over sticky rice with veggies on the side and crusty garlic bread!
