Spicy Chipotle Mayo Beef Patty Melt






















22 the righteousness of God through faith in Jesus Christ for all who believe. For there is no distinction:
23 for all have sinned and fall short of the glory of God,
24 and are justified by his grace as a gift, through the redemption that is in Christ Jesus,
25 whom God put forward as a propitiation by his blood, to be received by faith. This was to show God's righteousness, because in his divine forbearance he had passed over former sins. - Romans 3:22-25








1 Ground beef, makes 4-6 patties
Pinch of Smoked 
Pinch Seasoned salt
Pinch Garlic granules 
Pinch Smoked paprika 
Cracked black pepper

Chipotle mayo
Guacamole spread

Crispy bacon

Butter grilled  Sara Lee Artesano bread
Gouda cheese


Make burgers, leave a thumb indention in the top middle so they won't shrink.
Season on both sides with the seasonings.
Grill or pan fry to desired doneness.
Make mayo and spread.

Chipotle mayo
Mayo
1 chipotle in adobo, mashed

Mix together.

Guacamole spread
Small Tomato, chopped
1 small Onion, diced 
Avocado, mashed
A sprinkle Garlic 
Salt and pepper to taste

Scratch Chicken And Rice Vegetable Casserole


















4 and was declared to be the Son of God in power according to the Spirit of holiness by his resurrection from the dead, Jesus Christ our Lord,
5 through whom we have received grace and apostleship to bring about the obedience of faith for the sake of his name among all the nations, - Romans 1:4-5






This was a delicious creation, taste reminiscent of a chicken pot pie but in casserole form!! 

3 c Rotisserie chicken, pulled or chopped
1 c half and half
1 c heavy cream
1/2 c water
1 steam bag rice and veggie mix, I used Bird's Eye
Cornstarch slurry, 1/2 c water plus 2 T cornstarch 
1 T Chicken seasoning vase
1 t Tarragon 
1/2 c canned onion rings
1/4 c sour cream

Topping
1/2 c Cheese 
1/4 c Panko
1/2 c Canned onion rings


Bring water and chicken to a boil.
Remove chicken and place in 13x9 casserole pan.
Steam veggie rice bag and add to chicken.
Season with tarragon, add 1/2 c onion rings and sour cream, mix.
Add half and half, cream and chicken base to water and boil.
Add slurry to thicken.
Pour on chicken veggie mix and combine.
Add topping.
Bake in a preheated oven for 30 minutes.

EJ's Beer Chili




















3 Blessed be the God and Father of our Lord Jesus Christ! According to his great mercy, he has caused us to be born again to a living hope through the resurrection of Jesus Christ from the dead,

5 who by God's power are being guarded through faith for a salvation ready to be revealed in the last time.

7 so that the tested genuineness of your faith-more precious than gold that perishes though it is tested by fire-may be found to result in praise and glory and honor at the revelation of Jesus Christ.
8 Though you have not seen him, you love him. Though you do not now see him, you believe in him and rejoice with joy that is inexpressible and filled with glory,
9 obtaining the outcome of your faith, the salvation of your souls. - 1 Peter 1:3-9



1 lb and 1/4 lb ground beef, 80/20 from Sprouts
1 Onion, chopped
1/2 of a large can of beer, I used Miller Highlife
1 chipotle in adobo, mashed
1 T roasted garlic, mashed 
1/2 t garlic granules
1 t each smoked paprika, chili powder, smoked cumin
Smoked salt
Cracked black pepper
1 t mesquite liquid smoke
1 T Worcestershire sauce
2 T double strength tomato paste 
1 can tomato sauce
1/2 can water
Pinch of sugar
1 can black beans, drained 

Brown meat, garlic, liquid smoke, chipotle, pinch of sugar, all seasonings and onions.
Add Worcestershire sauce and tomato paste to browned meat.
Next add beer, water, drained beans and tomato sauce.
Simmer 20 minutes.


Toppings
Cheese
Onions
Tomatoes
Avocado 
Sour cream

Serve with crispy tostada chips.

Chicken Fried Pork Sandwich With Chipotle Mayo And Guacamole Spread




















8 Now we know that the law is good, if one uses it lawfully,

11 in accordance with the gospel of the glory of the blessed God with which I have been entrusted. - 1 Timothy 1:8-11




4 cuts out a Pork tenderloin
Cut into 2 inch chunks, cut again in the middle and butterfly.
Place in ziplock and pound really thin.

Dredge
2 c Flour
2 Eggs, beaten
Do a dip in egg then flour and repeat.

Seasoning for pork 
On one side sprinkle the Tuscan seasoning and on the other put the salt, pepper and tarragon.
Tuscan seasoning
Smoked salt
Cracked black pepper
Tarragon 

Olive oil for frying pork

Toasted bread

Chipotle mayo
3 T Mayo
1/2 of a Chipotle in adobo sauce
1 t Roasted garlic, mashed

Guacamole spread
Avocado, mashed
1/4 of a Onion, diced
1 small Tomato, chopped

Marinade
1/4 c low sodium soy sauce
1/4 c brown sugar
1/2 t chili oil
1 t toasted sesame oil
1 diced shallot
3 T roasted garlic
2 t fresh ginger, grated


2 c chopped chicken breast, squeeze a lime over the chopped pieces
1 lime, juice over chicken breast


1 c Cooked rice, set aside
1 butter lettuce, washed and dried

In a large ziploc bag add the marinade ingredients.
Add the lime juiced chicken.
Place in fridge for 45 minutes.

Pour the marinade and the chicken into hot lightly greased skillet.
I used 1 t grape seed oil and 1 t clarified butter.
Stir fry until the chicken is done. 
Take the lettuce leaf, add rice then the chicken.
Yum!!!
