Chicken and Shrimp Moo Goo Gai Pan







10 And I heard a loud voice in heaven, saying, "Now the salvation and the power and the kingdom of our God and the authority of his Christ have come, for the accuser of our brothers has been thrown down, who accuses them day and night before our God.

Seasoning for meat(split between the two):
2 t kosher salt
2 t brown sugar

Sauce:
1 t Chicken base seasoning
1 c Water
1/4 c Rice wine 
1/2 t Honey
1 T Soy sauce 
1 t Sesame oil
1 t Cornstarch


2 T roasted Garlic
1 t grated Ginger
1 shallot, diced
4 Chicken tenderloins, flat sliced
3 c shrimp, frozen cooked, remove tail
1 t Olive oil

2 Carrots, cut into matchsticks 
2 Baby Bok Choy, chopped
1/2 t Olive oil

Prepare angel hair pasta Al dente.

Separate meat into 2 plates.
Sprinkle 1/2 salt and 1/2 brown sugar on meat and toss to coat.
Set aside.
Prepare sauce and set aside.
Place oil in skillet and heat, add ginger, shallots and garlic to flavor oil.
Add chicken and lightly brown, then add shrimp.
Shrimp is already cooked so just heat through.
Remove from skillet, set aside. 
Wipe skillet with paper towel.
Add oil.
When oil is heated add veggies and sauté for 5 minutes. 
Leave veggies crunchy.
Add in sauce. 
Heat until thickened, then add in meat and pasta.

Greek Pork Tenderloin





5 So too at the present time there is a remnant, chosen by grace.
6 But if it is by grace, it is no longer on the basis of works; otherwise grace would no longer be grace. - Romans 11:5-6







Pork loin(comes 2 to a packet)
Greek pork tenderloin marinade( this blog under marinade tab)

I marinated my loin for 2 days.
Place marinade in a zip lock bag and add loin. 

To cook:
Sear in skillet with a little olive oil until slightly browned.
Place on a rack over water-wine bath, in a preheated 450 degree toaster oven.
Toast 15 minutes on each side until internal temp is 155 degrees.
Remove, tent with foil and rest for 5 minutes before slicing.

Greek Pork Tenderloin Marinade







20 The rest of mankind, who were not killed by these plagues, did not repent of the works of their hands nor give up worshiping demons and idols of gold and silver and bronze and stone and wood, which cannot see or hear or walk,
21 nor did they repent of their murders or their sorceries or their sexual immorality or their thefts. - Revelation 9:20-21







Pork tenderloin
1 sm. Shallot, diced
4 sprigs of fresh Thyme
2 twigs of fresh Rosemary
2 T Fresh greek oregano and spicy oregano, diced
1/2 of a lime zest
1/2 of a lime juice
1 t Red wine vinegar
1/2 c Olive oil
1/4 water
1/8 c white wine 
1 t Dijon mustard
2 t roasted Garlic, mashed with fork
1/2 t Kosher salt
A few turns of Cracked black pepper 

Whisk together, add loins, and marinate overnight.
Grill or bake as usual.

Honey Tomato Chutney Aioli/ Knock Off Tazikis Sauce

This is a knock off of Taziki's sauce. We use it on Greek seasoned pork tenderloin.

1 T Honey 
1 t Roasted Garlic
2 T Sun dried tomatoes
1/2 t Olive oil
1/4 c Mayo
1/8 t Sriracha  
1 small smoky chipotle in adobo, chopped 
1 t White raisins or dark, diced
A few turns of Smoked salt
A few turns of Cracked black pepper


Mix all together except olive oil.
Add oil a little at a time and whip with a fork. 

Crispy Mongolian Beef and Shrimp Pasta






15 Then the kings of the earth and the great ones and the generals and the rich and the powerful, and everyone, slave and free, hid themselves in the caves and among the rocks of the mountains,

Wow!!!

Beef and shrimp seasoning:

1 t kosher salt
1/2 t brown sugar
1/2 t of granulated garlic powder

Dipping batter for shrimp and chicken 

1/4 c soy sauce
1/2 c cornstarch 
1 egg, beaten
Whisk together, will be very thick

Oil for frying.

10 shrimp, cleaned, 
2 small filets, sliced 
1/2 box prepared pasta noodles
2 baby bok choy, cleaned and sliced lengthwise then chopped
1 t fresh ginger, minced
2 carrot, cut into matchstick 
1/4 c Mirin
1 T roasted garlic, minced
1 leek, sliced thin
1/2 of a shallot, diced
1 T olive oil
1 t sweet basil and chive compound butter, recipe on this blog under compound butter tab


Preheat the oil to hot.
Add the shrimp and beef to a bowl and season with salt, brown sugar and granulated garlic. Mix well.
Add shrimp and beef to dipping batter and coat.
Fry the shrimp and beef separately in the oil until golden brown. Cooks quickly using Fry Daddy. Then, remove the from the oil and let the shrimp and beef drain on paper towels to absorb any excess oil. 

In a large skillet heat the hot oil, add the ginger, bok choy, carrots, leeks, shallots and garlic.


Sauce:

1/2 c soy sauce
1/2 c honey
1/8 c brown sugar
1/4 c water
Pinch red pepper flakes
1 T oil

Cook the sauce ingredients over medium high heat stirring occasionally. Once the sauce thickens, it’s ready for use.
Combine the meat, veggies and sauce.
Serve over pasta.
