Bread Machine Cinnamon Raisin Bread Dough

Make dough in bread maker, easy 

Bake in oven, easy


2/3 c milk

2 large eggs

1 T vanilla extract 

3 T butter chopped 

1/4 c sugar

1-1/2 t salt

1/2 t cinnamon 

3 c aerated bread flour

2-1/4 t instant yeast

Into bread machine in this order

Set to dough cycle

Dough Cycle is 1hr 30 minutes 

Check a couple of times to make sure a ball is forming and pulling away from sides


Set aside 

2/3 c light raisins


Set aside for filling

1/3 c powdered sugar

2 t cinnamon 

1/8 t ground cloves 

Mix


Set aside for glaze of the loaf before baking

1 egg 

1 T water

Whisk

Brush bread top


After dough cycle is complete

Place on lightly floured parchment 

Pull dough over and pinch bottom to form ball

Cover and rest 10 minutes 

Flatten out dough and kneed in the raisins 

Shoot for a 10x14 size rectangle 

Lightly mist flattened dough with water

Add filling leaving a 1/2 inch border 

Tightly roll beginning with short ends, like making cinnamon rolls

Pinch edges and ends tightly together

Give a gentle roll to set seam

Place seam side down in a greased 9x5 inch loaf 

Let rise, covered 45-90 minutes until doubled in size

Brush with glaze wash


Bake preheated 375 degree oven middle rack 35-45 min until instant read thermometer reads 190 degrees 

Cool 10 minutes in pan

Move to rack and cool 20 minutes 

Slice and butter to serve
