Sous Vide Cuban Mojo Pork Slices































 

 

1 Peter 2:13-16


[13] Be subject for the Lord’s sake to every human institution, whether it be to the emperor as supreme, [14] or to governors as sent by him to punish those who do evil and to praise those who do good. [15] For this is the will of God, that by doing good you should put to silence the ignorance of foolish people. [16] Live as people who are free, not using your freedom as a cover-up for evil, but living as servants of God.



An ej original recipe!


Cook time 8 hours

Cook temp 176 degrees



5-6 lb pork butt roast, cut into 1/2 slices



4 hour Marinade or overnight 


1/8 c orange juice

1 c water

2 limes juiced

1 T mushroom Soy sauce

2 T roasted Garlic

1 Jalapeño, sliced  

1 T pickled Ginger, diced

1 t Toasted Cumin 

1 t Salt and 1 t pepper 


Place pork slices in marinade, divided between 2 bags.

Press out air.

Marinate 4 hours to overnight.

Overnight is better.

Double bag.

In outside bag, place 2 butter knives to help keep bags submerged.

Press out air from both bags.

Heat Sous Vide cooker to 176 degrees.

Cook 8 hours.

Dry off with paper towels.

Sear in oil or clarified butter.

Serve in sandwiches.
