Flat Top Smashed Cheese Burger

An ej original recipe!

1-1/4 lb. 80/20 Angus Beef, makes 4 good size burgers
Seasoned salt
Mrs. Dash, table 
Umami seasoning from Trader Joe's 


Heat skillet, I used a large non stick but cast is fine.
If you have a flat top on your gas stove, you can use it.
Makes a mess though!!
Make patties, mash pretty flat.
Season.
Place in hot skillet, cover with foil and mash with a cast iron press.
Burgers should immediately begin to sizzle.
Cook to 85 % done before flipping.
You can see the browning if you look at the side of the patty.
Then flip, cover with foil, mash with press.
These cook pretty quickly, around 5 minutes on the first side and maybe 3 minutes on the other.
Do not overcook!!
Add 2 pieces of cheese to beef patty.

Brioche buns
Smoked Gouda cheese
sliced Onions 
sliced Tomatoes
Lettuce
Pickles

Burger and fry sauce

1 T Mayo
1T BBQ sauce
1 t yellow mustard
Dash of Worcestershire sauce
1 t sweet pickle relish
Squirt of hot sauce, I used Sriracha
