Coq Au Vin

8 Boneless chicken thighs
1 Onion, sliced
2 Carrot, matchstick cut
1 clove Garlic, diced
6 Mushrooms, sliced
6 slices Bacon, diced
2 T tomato paste
Salted Butter
Fresh Rosemary
Fresh lemon Thyme
1 1/2 c Cabernet Sauvignon, reserve 1/2 c for cooking
1/2 c Water
1 t Chicken base seasoning 
1 T Flour
Salt and pepper 


Add 1 c of wine to a ziplock bag and add chicken.
Burp air from bag and let chicken marinate for 30 minutes to 1 hr.
Prepare veggies.
Heat Dutch oven, add diced bacon.
When bacon is done, add veggies. 
When veggies are done, remove them and add butter, salt and pepper chicken and sear chicken then add veggies and flour back in.
Add all liquids, tomato paste, seasoning, and herbs.
Place in preheated 350 degree oven and cook 30 minute, uncovered.
This was delicious, a very deep rich sauce that pared well with the chicken.
