EJ 'S Cocktail Sauce

6 T ketchup
1 T prepared horseradish 
1 T lemon juice
1 T brown sugar


Mix well. Great for shrimp and fries!!!

Marsala Sauced Meatball Spinach Artichoke Ravioli Bake





Make me to know your ways, O LORD; teach me your paths.  - Psalm 25:4







1 pgk. Meatballs (Publix) cook and chopped up
1/4 c Fine Sweet Marsala
Cracked black pepper
1/4 T coarse kosher salt
1/2 t fresh Thyme 
1 T fresh sweet basil



1/2 pgk. spinach, wilt in a skillet with a drizzle of olive oil, salt, 1/2 onion, 3 T cream cheese and 1/8 c heavy cream( prepare and set aside) cook until thickened


Spinach Ravioli stuffed with cheese and artichoke 
1 small Marinara sauce 
1 lb. Fresh mozzarella slices


Topping
1 c Italian cheese blend

Bake 350 degrees for 45 minutes. If it starts browning too much cover loosely with foil.


Brown chopped up meatballs.
Add seasonings and Marsala.
Sauté until liquid disappears.
Take paper towels and pat around the meat to remove any grease.

In a 13x9 pan, spread 1 c of the marinara, then the ravioli.
Spread the spinach mixture on top of the ravioli.
Next add 1/2 of the meatball mixture.
Now add the slices of mozzarella.
Spread the rest of the marinara on the cheese, next the rest of the meat followed by the shredded cheese blend.

Pumpkin Pie Spice Muffin Doughnuts






Just so, I tell you, there will be more joy in heaven over one sinner who repents than over ninety-nine righteous persons who need no repentance. - Luke 15:7





2 3/4 c AP flour
1 c white sugar
1/4 c cornstarch
1 T baking powder
1 t salt
3/4 t cinnamon
1/4 t ginger
1/4 t ground nutmeg
1 c buttermilk
1 stick salted butter, melted
2 large eggs plus 1 large yolk


Sugar dip
1 c Turbinado sugar

1 stick salted butter, melted



Adjust oven rack to middle position and heat oven to 400 degrees. 
Spray 12-cup muffin tin with vegetable oil spray. 

Whisk flour, sugar, cornstarch, baking powder, salt, cinnamon, ginger and  nutmeg together in bowl. 

Whisk buttermilk, melted butter, and eggs and yolk together in separate bowl. 

Add wet ingredients to dry ingredients and stir with rubber spatula until just combined.

Scoop batter into prepared tin. 
Bake until doughnuts are lightly browned and toothpick inserted in center comes out clean, 19 to 22 minutes. 
Let doughnuts cool in tin for 5 minutes.


Sugar dip
Remove doughnuts from tin. 
Working with 1 doughnut at a time, dip in melted butter, then roll in sugar, pressing lightly to adhere. 
Use your hand to press the sugar onto the doughnuts to coat them completely.
Transfer to wire rack to cool.

Zucchini Noodles with Carrots Onions and Garlic

This is a delicious side dish!!!

3 large zucchini, cut into Zoodles
1 onion, thin sliced
2 carrots, carrot sticks
2 T roasted garlic, mashed
Drizzle of olive oil
1 t clarified butter
Cracked black pepper
Coarse kosher salt
1/2 t Cajun seasoning



Put the oil and the clarified butter in a large non stick skillet and heat.
Add the onions, the carrots and the garlic.
Sauté until onions are soft, add all seasonings and the zucchini zoodles.
Stir to incorporate and sauté for 2 minutes.

Cashew Chicken Veggie and Noodle Stir Fry







8 "And I tell you, everyone who acknowledges me before men, the Son of Man also will acknowledge before the angels of God,

6 chicken tenderloins, cut into 1/4 in chunks
1 t cornstarch
1 c water


1 t fresh turmeric 
1 t fresh ginger
1 leek, chopped
2 baby bok choy, chopped
2 carrots, match stick cut
1 t roasted garlic, mashed
1 c dry roasted cashews
Drizzle of Olive oil for sautéing and 1 T clarified butter

2 pgks chicken flavor noodles, discard flavor pgk (Ramen), cook, drain and set aside

Sauce
1/4 c water
1 t sugar
1 T honey
1/8 c soy sauce
1/4 t toasted sesame oil
2 T Mirin
1 t cornstarch 
1/4 t red pepper flakes

In a bowl large enough, whisk cornstarch into water.
Place cut up chicken in the water and cornstarch.
Set aside.

Prepare veggies.
Set aside.

Prepare sauce.
Set aside.

Drain chicken, place on a few paper towels.
Drizzle oil and stir fry chicken.
Remove and set aside.

Drizzle oil and place fresh turmeric, leeks, garlic, carrots, bok choy, cashews and ginger in skillet.
Sauté 4 minutes until slightly soft.
Remove.
Add chicken and 1\2 c sauce, bring to a stir fry and add veggies mixture back in, cook 2 minutes.
Add rest of sauce.
Using tongs, add in cooked ramen.
Stir around until sauce is soaked into noodles.

Melt In Your Mouth Herbed Chops





8 I have set the LORD always before me; because he is at my right hand, I shall not be shaken. 
9 Therefore my heart is glad, and my whole being rejoices; my flesh also dwells secure. - Psalm 16:8-9





4 bone in pork chops
Drizzle of olive oil
1/4 c white wine
Fresh dill, sprinkle on chops
Seasoned meat tenderizer, add to one side of chop
Cracked black pepper
Coarse Kosher salt
Smoked paprika, sprinkle on the side without tenderizer
Slices of Gruyere cheese, paper thin  


Put a 1/4 t meat tenderizer on one side of each chop, cover with plastic wrap and pound.
Add dill and flip over. Add smoked paprika, a few grains of salt, and black pepper on the other side.
Drizzle oil in skillet and heat, add seasoned chops and sear on both sides.
When they are a nice caramel color, add the wine.
Cook just till wine is almost gone.
Transfer to a disposable pan and place slices of cheese on top.
Put under broiler, middle rack, until cheese browns, flip and repeat. 
It took about 4-5 minutes per side. 



Cookie Butter Pretzel Slims

Pretzel slims( Trader Joe's )
Dipping chocolate, melted


The amount depends on how much chocolate you melt, do a little or a lot.
These are simple but delicious!!
Spread pretzels with cookie butter.
Dip in chocolate.
Cool to harden chocolate.

Mint Oreo Sunflower Seed Candy

4 cookies, mint Oreos, chopped chunky
1/2 c Rosemary Thyme Maple Toffee sunflower seeds(Trader Joe's)
1 c Dipping chocolate, melt wafers 

Really simple, really delicious!!

Add seeds and cookies to melted chocolate and drop by spoonfuls onto parchment. Cool to harden into candies.


Edamame Succotash

6 slices Bacon, cooked and chopped
1 Onion
1 Leek
2 T roasted garlic
3 ears of fresh Corn
1 bag frozen Edamame, thawed and cooked
1 t Balsamic vinegar
1/2 Red Bell Pepper, strips
Salt and pepper to taste

Cook bacon, reserve 1 T of grease.
Sauté leeks, garlic, pepper strips and onions in grease.
Add fresh corn kernels, balsamic vinegar and cooked beans.
Season with salt and pepper.
When corn is tender, add bacon.

Brisket Burnt Ends in the Ovens

Brine
1/2 c  kosher salt
1/2 c granulated sugar
2 qt water


Rub
Your choice( I used Grill Mates Applewood Rub)

1 (5- to 6-pound) beef brisket, flat cut, untrimmed
Cut into long strips 1" wide by 5-6 " long


For baking:
1 (13 by 9-inch) disposable aluminum roasting pan 
2 c water
2 t liquid smoke


BARBECUE SAUCE
Your choice( I used my own Citrus BBQ sauce)


Dissolve 1/2 c salt and granulated sugar in 2 quarts cold water in large container. 
Slice brisket with grain into 1" strips.
Add brisket strips to brine, cover, and refrigerate for 2 hours.
Remove brisket from brine and pat dry with paper towels.
Add rub, refrigerate overnight.
Preheat oven to 275 degrees.
Cut into 2"-3" chunks, insuring each piece has a fatty bottom.
Sear in a skillet.
Place water and liquid smoke in pan.
Place a rack on top and add chunks.
Wrap tightly in foil.
Bake for 3 hrs.
Remove meat.
Drain most of the drippings, add 1 c BBQ sauce.
Add meat to sauce and place under broiler at least 6" from flame for 4 minutes, flip and repeat.
These were delicious!!!

Creamy Spinach Meatball Ravioli Casserole

14 oz Prego Pizzeria sauce
1 pgk cheese Ravioli 
1 box Creamed spinach, frozen Green Giant
6 Meatballs, sautéed and chopped
2 Carrots, matchstick cut
1 T roasted Garlic
Drizzle olive oil
1 t Parsley
1\2 t nutmeg
1 leek, chopped
Salt and pepper
1 pgk fresh mozzarella slices, 8 oz
1 c 4 cheese Italian blend

Sauté meat balls, carrots, leek, garlic, parsley, nutmeg, salt and pepper in olive oil. Set aside.
Prepare the creamed spinach, set aside.

In a 13x9 pan, spread 1/2 of the sauce.
Layer the ravioli in the sauce.
Next the meat sauce.
Then the fresh Mozzarella that has been spread with the rest of the pizzeria sauce.
Next spread the spinach on top of the mozzarella and sauce and top with Italian blend cheese.
Bake 350 for 45 minutes.

Hamburger Steak with Marsala Gravy









11 God is a righteous judge, and a God who feels indignation every day.

2 hamburger patties, 1/2" thick, 4" circle 
1/2 t Seasoned salt, sprinkle on burgers on both sides
Olive oil
1/2 c AP Flour 
1 Onion, sliced
Salt, to taste
Pepper, to taste
1/2 t Garlic granules
1/4 c Water
Splash of Worcestershire sauce
1/4 c Sweet Marsala(the real stuff) I use Florio Sweet Marsala


Make patties, place a thumb print in the center, helps stop shrinkage.
Dip into flour, both sides, add a drizzle of Worcestershire sauce and sear in olive oil.
Add onions and sauté while burgers cook 5 minutes on each side.
Remove onions.
Using a fork, cut burgers into chunks, move to side of pan.
Add a little flour to the grease and whisk until dissolved. 
Add the wine, water and garlic.
Reduce to desired thickness.
Add onions to meat and gravy mixture.
Serve with fries!!!

Okra Tomatoes Onions Bacon

1 Onion, chopped
2 c Okra, chopped
1 can stewed Tomatoes
1/8 c fried crisp Bacon, chopped
1 t Bacon grease
1/2 t dill
1 T Cajun seasoning
1/2 t parsley
1/2 t Sugar
1 T Chicken base
Cracked black pepper, to taste
2 t Roasted garlic, mashed
1/4 c water

Prepare bacon, set aside.
Sauté onions and garlic in bacon grease, add all seasonings.
Add water, stewed tomatoes and okra.
Simmer until okra is tender.
Add bacon before serving.

Mexican Honey Chipotle Slaw







Ask of me, and I will make the nations your heritage, and the ends of the earth your possession.  - Psalm 2:8









Slaw mix
1/8 c Buttermilk
1/8 c Apple cider vinegar
1/8 c Honey
1/4 c Mayo
1/2 of a Lime, juiced
smoked salt-cracked black pepper-garlic salt, to taste
1/4 t cumin
2 T sugar
1/2 -1 chopped chipotle in adobo
1/4 c Cilantro, chopped
Small pinch of pepper red flakes

Whisk all the wet ingredients together.
Chop cilantro and chipotle and add to wet ingredients.
Whisk in seasonings.
Add to slaw mix.
Let sit in fridge for 1 hr to let flavors develop.
Place on a bun, top of Mexican Habanero Mango Salsa Pulled Pork under Mexican tab this blog, add slaw to top of bun, yum!!!
