Brisket Burnt Ends in the Ovens

Brine
1/2 c  kosher salt
1/2 c granulated sugar
2 qt water


Rub
Your choice( I used Grill Mates Applewood Rub)

1 (5- to 6-pound) beef brisket, flat cut, untrimmed
Cut into long strips 1" wide by 5-6 " long


For baking:
1 (13 by 9-inch) disposable aluminum roasting pan 
2 c water
2 t liquid smoke


BARBECUE SAUCE
Your choice( I used my own Citrus BBQ sauce)


Dissolve 1/2 c salt and granulated sugar in 2 quarts cold water in large container. 
Slice brisket with grain into 1" strips.
Add brisket strips to brine, cover, and refrigerate for 2 hours.
Remove brisket from brine and pat dry with paper towels.
Add rub, refrigerate overnight.
Preheat oven to 275 degrees.
Cut into 2"-3" chunks, insuring each piece has a fatty bottom.
Sear in a skillet.
Place water and liquid smoke in pan.
Place a rack on top and add chunks.
Wrap tightly in foil.
Bake for 3 hrs.
Remove meat.
Drain most of the drippings, add 1 c BBQ sauce.
Add meat to sauce and place under broiler at least 6" from flame for 4 minutes, flip and repeat.
These were delicious!!!
