Flambé Walnut and Banana Topped Ice Cream
































Proverbs 1:7


    [7] The fear of the LORD is the beginning of knowledge;

        fools despise wisdom and instruction.



Have your lighter ready

Have your ingredients ready except ice cream


1 T butter

2 T brown sugar 

Pinch cinnamon 

1 ripe banana split lengthwise

2 T Bourbon or dark Rum

1/4 c walnuts


Melt butter add brown sugar and cinnamon in a small skillet 

Add banana strips

Coat bananas

Add nuts stirring to coat

Remove from heat

Add liquor 

Stand back and torch  


Top a serving of Vanilla ice cream

German Style Brats Apples Onions and Kraut




























 

 

Hebrews 1:1-2


[1] Long ago, at many times and in many ways, God spoke to our fathers by the prophets, [2] but in these last days he has spoken to us by his Son, whom he appointed the heir of all things, through whom also he created the world.



5 smoked beef brats (I buy mine at Aldi)

1 t olive oil for browning brats

1-1/2 c German style kraut (Aldi)

1 sweet Apple, sliced

1/2 c Beer (light) Belgium White Tide (Aldi)

1 small Onion, sliced 

Sugar to taste (start with 1 T, taste and see, I used 3 T to cut the hop taste) 

1/2 t each Salt and pepper

1/2 t Caraway seeds 

1 Bay leaf 


Slit brat from end to end but do not cut through

Fry brats in oil

Brown all around 

Remove to plate

If necessary, add another t of oil for sautéing apple and onion

Sauté onions, seasonings, apples

When the are soft add kraut

Cook on simmer 2 minutes then add beer

Cut brats on bias and add to apple kraut mixture 

Remove bay leaf 

Simmer 5 minutes 


Potato Casserole Fritters

Heat peanut oil to 350

Fry 3 at a time

Let them set before gently flipping (they will come apart)

Cook to a internal temp of 175-180

Drain

Sprinkle with crispy bacon bits and mozzarella cheese


Hash browns in dairy case

1 can Chicken soup

1/2 c Sour cream 

1 small chopped Onion

1 diced Jalapeño Pepper

Steak seasoning to taste

Mix

Form your desired amount of Fritters 

I did 8 ( golf ball size)

The rest of filling, I made a casserole

Roll in panko 

Fry


Panko for coating


Slightly Spicy Cajun Green Beans





























 

 

 

 

 

James 1:13-15

[14] But each person is tempted when he is lured and enticed by his own desire. [15] Then desire when it has conceived gives birth to sin, and sin when it is fully grown brings forth death.



Pan full of snapped Green beans of your choice (mine was a Dutch oven full) 

These were a mixture of rattlesnake and asparagus 


1 Chopped Onion 

1/4 c Ham pieces

1 T Chicken base seasoning 

1/2 t coarse Black pepper 

1-3  T Sugar (adjust according to how many beans) 

1 t Cajun seasoning 

1/2 t garlic granules 

1/2 t jarred Calabrian Chili Peppers

1 piece Parmesan rind

Olive oil (good drizzle)

Water ( just even with beans)

Bring to medium boil

Taste of your pot likker and adjust seasonings

Sugar cuts that woodsy taste 

Boil uncovered

Stir occasionally 

Cook water out

Drizzle again with oil

Give a quick fry 

Remove cheese rind

Arroz Con Pollo

4-6 Boneless skinless chicken thighs


Rice

1 bag of cooked Jasmine rice( I do mine in rice cooker and freeze by the qt bag) 

Set aside


Queso

Seasoned rice

Marinated oven grilled and steamed chicken thighs


2 hour Marinade for chicken thighs

2 Chipotle chili in adobo 

3 T roasted garlic 

1 t oregano 

1 t kosher salt

2 t chili powder

1 t toasted cumin 

2 T olive oil

1/2 c water

Blend until incorporated 

Add to gal ziplock

Add thighs

Marinate 2 hours


Remove gates except 1

Preheat 350 degree oven

Using a large Dutch oven, add a ramekin to bottom of Dutch oven 

Add water to half way up of the ramekin 

Set a saucer or rack on top of ramekin 

Bring to light boil

Add thighs staggering on top of each other

Add large onion, quartered to the water

Add lid

Place grate on bottom place

Cook 2 hours or until thighs are 170 degrees


To serve

Rice

Top with chicken 

Top with cheese sauce


Queso 

1/4 c White American cheese 

1/4 Velveeta 

1/4 c half and half 

1 t salsa

Squeeze of lime 

Simmer until cheese melts and sauce is thickened 

Set aside


Rice Seasoning mix

1 t Dried cilantro 

1 t toasted cumin

1/2 t turmeric 

Pinch of saffron

1 t garlic granules 

1 t oregano 

1/2 t kosher salt

Set aside


To prepare rice

1 T tomato concentrate

Seasoning 

Cooked rice

2 T butter

Water as needed

Sauté rice, butter and seasonings in skillet adding small amounts of water as needed 

Heat rice though 

Should be fluffy and fragrant
