Air Fryer Bacon Wrapped Cajun Chicken Thighs





















 

 

 

 

 

 

 

 

 

 

Psalm 140:6


    [6] I say to the LORD, You are my God;

        give ear to the voice of my pleas for mercy, O LORD!





6 Boneless Skinless Chicken thighs 

6 thin slices Feta (break into chunks)


Oil thighs with olive oil both sides 

Sprinkle seasoning lightly both sides

Top with feta

Pull sides together 

Wrap with bacon 

Sprinkle again with seasoning 

Set on prepared pan

Drizzle again lightly with olive oil


Air fry on foil lined pan with parchment 

Air fry 425 degrees for 13 minutes 

Rotate pan 

Air fry another 13 minutes or until internal temp is 165 degrees


Olive oil for drizzling over thighs


Bacon 2-3 slices each thigh according to size


Cajun seasoning mix

2 T Cajun seasoning 

1 T kosher salt

1 t black pepper 

1 t smoked paprika 

1 t garlic powder 

1 t onion powder 


Serve with orzo salad!

Pan Fried Potato Starch Dusted Cajun Tilapia






























Psalm 139:13-16


    [13] For you formed my inward parts;

        you knitted me together in my mother’s womb.

        my soul knows it very well. 

    [15] My frame was not hidden from you,

    when I was being made in secret,

        intricately woven in the depths of the earth. 

    [16] Your eyes saw my unformed substance;

    in your book were written, every one of them,

        the days that were formed for me,

        when as yet there was none of them.



An ej original recipe!


Frozen Tilapia ( I got mine at Aldi, individually frozen)

Potato starch 

Cajun seasoning 

Garlic seasoning 

Salt and pepper 

Olive oil

Fresh squeezed Lemon juice


Olive oil and clarified butter for pan frying


Thaw fish in cold water

Open and dry Filets with paper towels 

Drizzle oil on each Filet 

Squeeze lemon

Season according to your taste 

Add potato starch to plate 

Dust filet with potato starch 

Heat oil and butter in skillet

Fry until crispy on one side the flip and repeat

This is mild in taste and delicious 

Serve with *Boursin mashed potatoes and cut tomatoes, cut radishes etc


Note*

You can make a quick Boursin by mixing equal parts of spreadable butter and spreadable cream cheese and adding salt, pepper, chives and garlic

Fiber Enriched Cornbread
































Psalm 139:1-4


To the choirmaster. A Psalm of David.


    [1] O LORD, you have searched me and known me! 

    [2] You know when I sit down and when I rise up;

        you discern my thoughts from afar. 

    [3] You search out my path and my lying down

        and are acquainted with all my ways. 

    [4] Even before a word is on my tongue,

        behold, O LORD, you know it altogether.



Air fry 400 degrees for 25 minutes or until cornbread is done 

Use small cast iron skillets


Wet ingredients 

2 t oil

1 c buttermilk 

2 T whole psyllium husk no flavor (found at Walmart next Metamucil) 

1/2 c melted butter

2 eggs

Whisk together just before use


Dry ingredients 

1 c AP flour

1 c cornmeal 

2 T brown sugar

1/2 t salt

1/2 t soda

1-1/2 t baking powder 

Using a large bowl, whisk together 

Set aside


Onion mixture 

1 large chopped green onion

1 Serrano, diced, seeded and spine removed

1 JalapeƱo, diced, seeds and spine removed  

1 ear of corn, shaved (microwave, covered, 1 minute each side)

Mix together 


1 c grated sharp cheddar 


To the dry ingredients add the wet

Add onion mixture 

Stir in cheese 

Add oil or butter to small skillets 6 inch

Heat 

Add batter to hot oil ( batter is thick) 

I got 4 cakes

Thin cakes are more crispy 

Freeze some for later

1 c plus 3 T whole milk

2 T whole psyllium husk( not powder)

1 egg

1-1/2 c AP Flour 

1 T sugar

1 T baking powder 

1/2 t salt

6 T grated cold butter(place in freezer while oven preheats)


Add milk, psyllium husk and egg to bowl and whisk well

Add dry ingredients to another bowl and whisk

Grate butter into dry ingredients 

Using fingers to distribute butter throughout dry ingredients 

Add wet ingredients to dry and form a shaggy dough

Flour parchment 

Add dough, fold over a few times, pat out to 1 inch

Cut biscuits out with 2 inch cutter

Bake preheated 450 degree oven for 12-14 minutes 

Cool and eat

The Great Day of the LORD

[1] “For behold, the day is coming, burning like an oven, when all the arrogant and all evildoers will be stubble. The day that is coming shall set them ablaze, says the LORD of hosts, so that it will leave them neither root nor branch. [2] But for you who fear my name, the sun of righteousness shall rise with healing in its wings. You shall go out leaping like calves from the stall. [3] And you shall tread down the wicked, for they will be ashes under the soles of your feet, on the day when I act, says the LORD of hosts. (ESV)

 

 

1 lb chicken breast, sliced thin and cut into strips


Sauce and marinade 

1/2 c hoisin 

2 T Soy sauce

1 T rice vinegar

1 T roasted garlic 

1 T pickled diced Ginger 

2 t cornstarch 

1 t toasted sesame oil

2 T Mirin 

 

Mix and set aside 

Reserve 1/2 c for sauce

Put rest in cut up chicken 


Veggies

2 c Cabbage, chopped 

1 Onion, sliced

1 carrot, cut into match sticks

1/2 c Mushrooms(optional)

Oil for stir frying

Set aside


2 beaten eggs 

1 t oil

Beat together 

 

Add marinade to chicken and let sit 20 minutes.

Stir fry veggie in oil and remove to plate.

Add egg mixture to skillet and fry. 

Do not flip until first side is done.

Remove to plate and cut into strips.

Fry chicken in a single layer.

You want that crispy texture. 

Add veggies back, add rest of sauce and stir.

Serve.  

 


Serving suggestions 

Eat as a stir fry

Serve over rice or noodles

You can also serve on a thin pancake
