Spicy Crab Rangoon






Eph.1:

Wonton Wrappers

1 bar of softened cream cheese
1 can of crab, drained
1 diced Shallot
1/2 t Worcestershire  sauce
1/2 t sesame oil
1T Sriracha
1T honey
1 roasted garlic clove, mashed
Salt and pepper to taste

Water to seal wontons 
Fry in hot oil until slightly brown.
Salt and pepper while hot.

Fried Potatoes and Onions

Ex.20:

4 potatoes
1 onion
1 onion seasoning salt 

garlic salt 
oil for frying


Microwave potatoes for 3 minutes on each side.
Slice into thick slices.
Take a cast iron skillet and heat oil.
Oil should be about a quarter inch thick in skillet.
Add potatoes and seasoning salt, fry until soft, flipping to insure even cooking. Add onion, cook until translucent.

Drain on paper towels, add garlic salt. 

Mexican Meatloaf

I Corinthians 15:3-4
3 For I delivered to you as of first importance what I also received: that Christ died for our sins in accordance with the Scriptures,
4 that he was buried, that he was raised on the third day in accordance with the Scriptures,




2 T olive oil
1/2 cup finely chopped leeks
1 medium carrot, finely chopped
1 rib finely chopped celery
1/2 of a chopped jalapeno
1 clove roasted garlic
1/4 c fresh chopped cilantro
1 lb. ground turkey
6 ounces soft Mexican chorizo, removed from casing and crumbled 

3/4 t smoked salt
1/4 t freshly ground black pepper 

/4 t cayenne pepper 1/2 t ground cumin 1 c buttermilk
1/4 cup ketchup

1 T smoky chipotle Tabasco 1/4 cup sour cream
1/2 c Panko

Salsa-Glaze:
2 medium tomatoes, cored
1/4 medium white onion
2 cloves roasted garlic, mashed
1/4 cup brown sugar
2 peppers from canned chipotle chile in adobo sauce, minced 1 tablespoon Dijon mustard
1/2 t smoky salt

In a heavy skillet, add the oil and heat over medium-high heat. Add the onion, jalapeno, carrot, celery, and garlic, stirring often until vegetables are soft.
In a large bowl combine the sauteed vegetables, ground beef, chopped cilantro and chorizo.
In a medium bowl, combine the salt, pepper, cayenne, cumin, and buttermilk. Add the ketchup and sour cream. Add Panko, meat and veggie mixture and mix thoroughly.
Place in crock pot on high and cook for 4 hrs.
Meanwhile, heat a heavy skillet over high heat. Add the whole tomatoes, onion, and roasted garlic cloves. Cook veggies, turning frequently, until lightly charred on all sides. Add all the charred ingredients to a blender. Pulse until chunky, pour into a small skillet and stir in the sugar, chipotle chile and mustard. Bring the mixture to a boil over medium heat. Cook until slightly thickened, about 4 to 5 minutes and season with salt, to taste.
Spoon the salsa-glaze over the meatloaf and serve. 

Revani (Greek Semolina Cake)

28 so Christ, having been offered once to bear the sins of many, will appear a second time, not to deal with sin but to save those who are eagerly waiting for him.


This cake recipe makes my mouth water!! 
2 1/2 cups granulated sugar
3 cups cold water
1 small stick cinnamon

4 whole cloves
Zest of 1 orange
7 ounces unsalted butter (14 T) 

6 eggs
2/3 cup all-purpose flour
1 cup + 2 T fine semolina
1 T baking powder 

3/4 cup blanched almonds, finely chopped 
1 t vanilla extract
2 T brandy


Preparation:
Combine 1 1/3 cups of the sugar with the cold water in a saucepan and simmer over a low heat until the sugar has dissolved. Then, add the cinnamon stick, cloves and orange zest and simmer for another 15 minutes. Remove the cinnamon stick and cloves. Cool.
Preheat the oven to 350F. Place the butter in a bowl and beat until soft and light with an electric blender or hand whisk. Slowly add the remaining 1 cup sugar, then add the eggs individually, beating thoroughly after each addition. In another bowl, sift the flour, semolina and baking powder together. Add the chopped almonds and mix well. Gradually add this mixture to the batter, beating continuously. Finally, add the vanilla and brandy to the mixture and pour into a buttered 9 x 12 inch rectangular baking pan.
Bake for 30 minutes. Remove from the oven and score the cake into diamond shapes with a sharp knife. Spoon the cooled syrup over the cake and allow to cool. Decorate each portion with a blanched almond.

Cream Cheese Squash Casserole




Gal.2:
16 yet we know that a person is not justified by works of the law but through faith in Jesus Christ, so we also have believed in Christ Jesus, in order to be justified by faith in Christ and not by works of the law, because by works of the law no one will be justified.





6 yellow squash
1 chopped onion
1/3 of a stick of cream cheese
1/4 c cheddar cheese
1 t chicken base seasoning
1/4 t Cajun seasoning
1/4 t granulated garlic 

Topping
1/2 c canned onion rings
1/2 c cheddar cheese
1/2 c panko

Add these to food processor and pulse just until incorporated.


In microwave, add 1 t water, steam squash, onion and seasonings until tender. Add cream cheese and cheese. Add to a pie plate that has been sprayed with non stick spray and has a small sprinkling of topping. Add rest of topping to top of casserole, bake 325 for 20 minutes.
