Not Your Ordinary Squash Casserole


Bake 350 for 30 minutes



1 ½ lb yellow squash
¼ c onions
4 oz cream cheese cut into cubes
1 ½ c cheddar cheese
¼ c cracker crumbs

Salt & pepper


Steam squash in microwave. Drain, reserve juice. Add cr. cheese while squash is hot. Add ½ of the cheddar cheese. If it’s too dry add a little juice. Put in casserole dish and add rest of cheese on top and the cracker crumbs.

Miss Judi's Spicy Crackers

I know this is a weird recipe but they are great. My 3 year old granddaughter can't stop eating them.
 


1 box of white crackers, 4 sleeves
1c cup canola oil
1-2 tablespoons red pepper flakes
1 packet dry ranch dressing mix
3 tablespoons grated Parmesan cheese
1 tablespoon Cayenne pepper, optional
1 large 2.5 gallon plastic bag

Put crackers in plastic bag and pour ingredients over the crackers. Mix by moving the bag around. Let the bag rest for a' couple of hours, turning the bag every 15 minutes.

Evelyn’s BBQ sauce

People love this!! When we smoke pork, friends always want the recipe. It keeps well a long time in the fridge because of the vinegar.


44 oz Heinz ketchup
1/2c to 3/4c white vinegar (according to taste)
1T California Style Garlic salt with parsley
1T cayenne pepper (or more if you like heat)
2T McCormick Cajun seasoning
1/2c to 3/4c white sugar (according to taste)



Heat in heavy saucepan to a light boil

Cook for 15 min

Chicken Chili

Rotisserie Chicken
Onions
Bell Pepper
½ of chipotle in Adobo
1 can of stewed tomatoes
1 can of tomato paste
1 can of spicy V8
1 can black beans
Dash of Worchester sauce
7 t (not heaping) of my chili spice mix
1 t sugar
1-2 cups cheese (mexican blend)

Taco spice mix(for tacos or chili) 7t equals 1 pgk of store bought taco mix
6 t chili powder
5 t paprika
41/2 t cumin
21/2 t onion powder
1/2 T garlic powder
1/8 t cayenne pepper

Lemon Lift Punch

This is a simple but delicious punch. I have used it for weddings, birthday parties, baby and wedding showers or just for a family get together. I have had numerous request for this recipe because it is so well loved!!




2 small pgks lemonade Kool Aid (unsweetened)
2 c sugar(dissolve in hot water)
2 qts hot water
1 46 oz can pineapple juice

1 qt of sprite or ginger ale



Freeze all but sprite. I use empty gallon size water jugs. Thaw to slush stage. Add Sprite or ginger ale before serving.

Yields 40 servings
