Sourdough Discard Rolls

 


 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 Psalm 27:1


Of David.


    [1] The LORD is my light and my salvation;

        whom shall I fear?

    The LORD is the stronghold of my life;

        of whom shall I be afraid?



1 c 98-100 degree warm water

1-1/2 T Quick yeast

3 T white sugar

2/3 c discard sourdough set out of fridge for an hour

1 beaten egg 

2-1/2 T melted butter

1-1/2 t kosher salt 

3 1/2 c Bread flour or AP flour extra 1/2 c if needed


Egg wash 

1 beaten egg

Splash of water


Using stand mixer add water and discard 

Mix together quickly on medium speed

Add sugar and yeast, watch for activation ( foam and bubbles) then add butter and salt

Mix again

With mixer running on medium, add 1/2 c of flour at a time

Dough should be tacky

Knead 5 -7 minutes till ball forms and it pulls away from sides

It took 5 minutes for me

Remove to counter

Make smooth ball

Cut in half then each half in 6 for a total of twelve 

I'm going to make them smaller next time because that was too much of a serving

Stretch dough on under size all around to form ball and pinch closed

Roll between both hands on counter to get a smooth texture 

Place on non stick metal 13x9 pan

Rise covered with towel 1 hr in warm place

I preheated my oven on broil then turned it off and added covered rolls to do their rise

Remove from oven after rise

Preheat oven 

Bake 375 degrees oven for 20 minutes 


I made honey butter for spreading or dipping

This recipe has been a long time coming!!

Makes 6-7 cakes depending on size of cake


Serve with lemon and remoulade sauce

Easy Remoulade Sauce 

1/3 c Sweet chili Thai sauce 

1/2 c Mayo 

Squeeze of lemon juice

Whisk 


Crab 

1 lb jumbo lump crab meat(Costco) $29

Drain rinse in cold water

Cover with cold water for 10 minutes and drain

Cover with cold water again and add lemon slice, let sit 10 minutes 

Drain and mash water out

Pick over to remove any shell

Set aside over strainer to continue to drain


Veggies

1/4 c diced green tops

1/4 c diced red baby bell pepper


Flavor ingredients 

1 t Worcestershire sauce

1 t Old Bay seasoning 

1 egg 

1/4 c Dukes Mayo

1 t full fat sour cream

1 t fresh lemon juice

1 t Dijon 

1 t Kosher salt

1/2 t Smoked paprika 

1 t cayenne pepper

1 t dried parsley 


Binder

1/4 c crushed Ritz crackers

2 T panko


More panko to roll cakes in


Take flavor ingredients and add to large bowl

Mix

Add veggies

Add binder ingredients 

Mix

Fold in crab

Pat into desired size cake

Roll in panko bread crumbs

Place on parchment and put in freezer for an hour

Fry in hot clarified butter/olive oil mixture ( just to cover bottom of large non stick skillet)

Fry 5-6 minutes each side until golden brown

Do not flip first side until the total time has completed 

You can peek by lifting edge up with fish spatula 

Drain on rack to insure crispness

Bread Sticks Dough Mixed and Kneaded in Bread Machine

These are delicious!!

Make dough in machine, take dough out, shape, rise and bake in oven.


Large sheet pan covered in foil

Spray with non stick 

Set aside


350 degrees for 20-25 minutes 

Dough cycle takes awhile to complete


Place ingredients in bread machine in this order

1 c 80 degree water

3 T softened butter

1-1/2 t salt

3 c aerated bread flour

2 T white sugar 

1 t Italian seasoning 

1 t garlic granules 

2-1/4 t quick yeast 


Turn on bread machine to dough cycle 

After 5 minutes of mixing, check to see if you need flour or water

When cycle is complete, remove dough to lightly floured parchment 

Divide in half, then divide each half into 12 pieces

Roll into 4 inch cigar shapes

Rise, in warm place, covered until doubled around 30 minutes 

Bake

Brush with melted butter and sprinkle with Parmesan 


Finishing topping 

Brush on seasoned butter

1 T melted butter 

1/4 t garlic granules 

Then sprinkle on 1 T grated Parmesan

Mediterranean Bacon Cheese Ground Chicken Sliders

1 lb ground chicken 

1 dinner cut mortadella (from Publix deli) diced in processor

1 Shallot, diced in processor 

1/4 c roasted real bell pepper in olive oil(chopped) I made my own

1/3 c Feta cheese, crumbled

1 lime juiced

3 T heavy cream

Pinch Red pepper flakes 

1/2 t dried Oregano 

1/2 t dried Rosemary 

1/2 t dried Thyme

1 t Burger seasoning ( I used fire roasted garlic)

Salt and pepper to taste

Mix well

Make into slider size patties

I usually get 6 patties 

Fry in olive oil

Finish off with a sear in Bourbon 


Toasted brioche bun

Crispy bacon strips 

Provolone Cheese slices

Onions

Tomato

13x9 pan


Crust

2 sleeves Ritz, crushed

1 stick melted butter

4 T sugar

Mix 

Press into pan


1 Can Eagle brand

6 oz frozen orange concentrate, thawed

2 large Can Mandarin oranges, drained and chopped

20 oz Can crushed pineapple, drained

1 c toasted chopped pecans

Mix together


Fold in 

10 oz Cool whip

Add to Ritz Crust 

Chill several hours before eating
