Skillet Chocolate Chip Oatmeal Cookie

 


 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

1 Corinthians 15:26

3 T melted butter( I used salted)

more for greasing the skillet.

4 T brown sugar

2 T granulated sugar

1 large egg yolk

1/2 t vanilla extract

1/3 c AP flour

1/4 c old-fashioned oats

1/4 t baking soda

1/4 t ground cinnamon

1/4 c dark chocolate chips



Heat your oven to 350°F 

Butter a 6.5-inch cast iron skillet 

Using small bowl mix together the melted butter, both sugars until well combined

Add the egg yolk and vanilla extract, and beat until smooth

Using another bowl, whisk together the flour, oats, baking soda, and ground cinnamon

Add the dry mixture to the wet ingredients, mixing until just combined

Gently fold in the chocolate chips

Press the cookie dough

into the buttered skillet

Bake for 14-15 minutes until the top is just lightly golden

The cookie will continue to cook in the hot skillet

Cool in the skillet for at least 10 minutes

Chicken Pot Pie Soup with Crusty Sour Dough Baguette

2 c Rotisserie chicken, shredded 

1 qt Chicken Bone broth 

1 c water

4 large Carrots, chopped 

1 medium Onions, chopped 

4 medium Potatoes, chopped 

1/4 c Frozen Green peas

1/4 c Half and half 

1 t chicken base seasoning 

Black pepper 


Boil all veggies except peas in bone broth with the seasoning until fork tender, 20 minutes should be enough time

Add chicken, water and half 

Simmer 10 minutes 


Serve with a warm chunk of Sour dough Baguette from a bakery (got mine from Panera)

2 qts shelled raw peanuts( I buy mine on Amazon) you can salt roast or boil

1-2 T kosher salt, according to taste

1-2 T Cajun seasoning, according to taste

1 seeded and cut in half JalapeƱo 

Water just to cover


Setting - Pressure cook 

Time - 50 minutes 

15 minutes rest before taking pressure off

Waffle dry ingredients 

2/3 c AP flour 

1/2 c cornmeal 

3 T sugar

1 T baking powder

1/4 t salt


Wet ingredients 

2 T olive oil

1 egg

1/3 c -1/2 butter milk

2 T whole psyllium fiber


Mix dry ingredients 

Mix wet ingredients just before use

Mix wet and dry ingredients 

Put waffle in waffle maker

Remove to plate

Butter and place syrup on waffles 

Serve with fried chicken

Glaze

1 T maple syrup 

1/2 t balsamic vinegar 

1/2 t Molasses 

Mix


Maple Molasses Balsamic vinegar glaze

Figs, sliced thin 

Bacon bits

Caramelized onions 

Feta

Mozzarella shreds 


Tortillas 


Spray tortillas with non stick

Place on foil

Spread very thin layer of glaze

Place thin sliced figs around the edges 

Sprinkle with bacon bits

Lightly scatter onions

Add Feta and mozzarella 

Drizzle with olive oil

Sprinkle with black pepper 

Air fry 450 degrees until crust is crispy around edges

Cut in slices

Swoon
