Sautéed Spring Mix with Chicken Nuggets




























 

 

 

 

Isaiah 45:22


    [22] “Turn to me and be saved,

        all the ends of the earth!

        For I am God, and there is no other.




Make your nuggets and set aside after slicing 



1 t olive oil

1/4 c thin sliced onion

Pinch of red pepper flakes

Salt and pepper to taste 

Sauté the above ingredients 


Add the greens

2 c spring mix

Sauté 3 minutes

Andouille Lima Peppers and Corn Succotash
































Isaiah 42:1


The LORD’s Chosen Servant


    [1] Behold my servant, whom I uphold,

        my chosen, in whom my soul delights;

    I have put my Spirit upon him;

        he will bring forth justice to the nations.



3 ears shaved off cob Corn 

1 c left over cooked Green Lima beans

1/2 c chopped Onion

1/4 c Red Bell pepper

1/4 c diced Andouille 

1 t clarified butter

1 t Chicken base seasoning

1/2 t Old Bay

Salt and pepper to taste

1/4 c Water


Sauté onion, peppers and garlic in butter

Add sausage, veggies, seasonings, half and half, water

Cook until liquid reduces

Semi Homemade Sour Cream Caramel Cake
































Isaiah 37:15-20


[15] And Hezekiah prayed to the LORD: [16] “O LORD of hosts, God of Israel, enthroned above the cherubim, you are the God, you alone, of all the kingdoms of the earth; you have made heaven and earth. [17] Incline your ear, O LORD, and hear; open your eyes, O LORD, and see; and hear all the words of Sennacherib, which he has sent to mock the living God. [18] Truly, O LORD, the kings of Assyria have laid waste all the nations and their lands, [19] and have cast their gods into the fire. For they were no gods, but the work of men’s hands, wood and stone. Therefore they were destroyed. [20] So now, O LORD our God, save us from his hand, that all the kingdoms of the earth may know that you alone are the LORD.”



1 Butter Golden Cake Mix

8 oz. sour cream tub

1/3 c light olive oil

1/4 c sugar

1/4 c water

4 eggs

1 t vanilla 


Caramel Icing


1-1/2 c white sugar

1/2 c butter

1/4 c plus 1/8 c evaporated milk


An extra 1/2 c white sugar for browning


For baking Cake 

Preheat the oven to 350º F. 

Grease 13x9 pan with non stick.

In a large bowl, mix the cake mix, sour cream, oil, sugar, water and eggs together on low with an electric hand mixer until incorporated. 

Turn to medium speed and beat for two minutes.

Pour mixture evenly into pan, tap on counter to release any bubbles.

Bake for 40-45 minutes. 

Cool completely and frost.


Caramel Icing


Combine sugar, evaporated milk, and butter in a large, heavy saucepan. 

Bring to a boil over medium-high heat, stirring constantly.


Meanwhile, brown 1/2 cup sugar in a small, heavy skillet. I use a non-stick skillet. Cook over medium heat, stirring constantly until sugar melts and the syrup is light, golden brown, about 3 minutes.


Add the sugar syrup to the milk mixture, stirring constantly.

When the mixture reaches the soft ball stage (230º on a candy thermometer), remove from the heat. 

Beat with an electric hand mixer until the mixture reaches spreading consistency 10 minutes.


Spread quickly over the cooled cake layers.

Chicken Broccolini Rigatoni in Parmesan and Mozzarella Sauce

































Isaiah 30:18


 Will Be Gracious


    [18] Therefore the LORD waits to be gracious to you,

        and therefore he exalts himself to show mercy to you.

    For the LORD is a God of justice;

        blessed are all those who wait for him.



 

2 c cooked rigatoni cooked al dente and set aside, reserve 1 c pasta water


2 c shredded Rotisserie breast, set aside

2 c broccolini cleaned and part of stems removed, set aside


3 T clarified butter

1/2 c chopped onions

1/4 c chopped Leeks 

2 T roasted garlic

1 t Chicken base seasoning 

1 T rinsed capers

1 t Trader Joe's soffritto 

Stir fry in clarified butter until veggies are tender and add chicken 


Next add the following ingredients 

1 c chicken stock

1 c evaporated milk

1 c warm pasta water with 3 T flour whisked in

Simmer until it starts to thicken

Add drained rigatoni 


Next add the cheese

1 c grated Mozzarella 

1 c grated Parmesan 

Simmer until cheeses melt 

Serve with garlic bread

No Water Candied Yams


































Isaiah 26:19-21


    [19] Your dead shall live; their bodies shall rise.

        You who dwell in the dust, awake and sing for joy!

    For your dew is a dew of light,

        and the earth will give birth to the dead.


    [20] Come, my people, enter your chambers,

        and shut your doors behind you;

    hide yourselves for a little while

        until the fury has passed by. 

    [21] For behold, the LORD is coming out from his place

        to punish the inhabitants of the earth for their iniquity,

    and the earth will disclose the blood shed on it,

        and will no more cover its slain.



2 lbs yams, peeled and sliced as for scalloped potatoes, 1/4 inch thick rounds


2 T orange juice

2  T pure maple syrup 

1 T vanilla

2 t Cinnamon 

1 t Ginger 

1/2 t Nutmeg

1/8 t Cardamom 

Pinch Salt

1/4 c Brown sugar 

1/4 c White sugar

1/2 stick Butter cut into small cubes


Put yams in deep pot

Add wet ingredients except butter on top of yams

Sprinkle dry ingredients over yams 

Toss to cover yams

Take 1/2 of butter cubes and work into yams

Add remaining cubes on top

Turn to medium heat to bring to a light boil

Stir well

Turn down to simmer and cook covered 20-30 minutes, stirring occasionally
