Peruvian Green Sauce




























 

 

Psalm 49:7-9


    [7] Truly no man can ransom another,

        or give to God the price of his life, 

    [8] for the ransom of their life is costly

        and can never suffice, 

    [9] that he should live on forever

        and never see the pit.



Stir fry 1/4 c chopped onion and 3 T roasted mashed garlic in 1 t olive oil.

Cool.


To a blender add:

Cooled onion/garlic mix 

1/2 c Mayo 

2 T vinegar

4 t yellow mustard

3/4 t salt

1/2 t black pepper

1 T Honey

1 seeded and chopped Jalapeño 

1 bunch cleaned chopped cilantro 


Pulse to incorporate.

Drizzle over chicken etc!

Store in fridge.

Thai Shrimp in Pineapple Sauce topped with Salt and Pepper Pistachios

An ej original recipe!



1/4 c Salt and pepper pistachios


8-10 large Shrimp, cleaned and cut in half 


10 minute marinade for shrimp

1 T Pineapple topping

1/4 t chili garlic sauce

1/8 c light Soy sauce

1 T Lemon juice

Mix and toss in shrimp


Veggies

1 c thin sliced Cabbage

1 c thin sliced Onion

Salt and pepper


1/8 c Mirin 


1/2 c cooked rice

Reserved marinade 


Sauté drained shrimp in 1 t oil until 3/4 way done

Reserve marinade 

Set aside


Add 1 T oil, heat and add veggies

When veggies are done add rice and Mirin.

Just sauté until veggies are slightly tender, add shrimp 

Top with salt and pepper pistachios 

Serve with mini egg rolls

Crispy Oven Garlic Fries






























Psalm 47:8

Preheat oven to 400 degrees



5 Medium size Yukon potatoes cut into even sized fries

3 T olive oil

1 T cornstarch 

1/4 cold water

Non stick cooking spray to spritz sheet pan

Kinder's  Wood fired Garlic seasoning


Place cut fries in cold water

Rinse well

Dry

Put cornstarch and water in bowl and stir to combine 

Microwave 25 seconds to make a paste

Toss fries in paste

Season

Spray sheet pan with non stick

Drizzle oil in pan

Add fries in a single layer

Cook 12 minutes 

Remove from oven and cover loosely with foil 

Cook an additional 10 minutes 

Season again if necessary 

Serve

Psalm 46:1-3


God Is Our Fortress


To the choirmaster. Of the Sons of Korah. According to Alamoth. A Song.


    [1] God is our refuge and strength,

        a very present help in trouble. 

    [2] Therefore we will not fear though the earth gives way,

        though the mountains be moved into the heart of the sea, 

    [3] though its waters roar and foam,

        though the mountains tremble at its swelling. Selah



2 c AP flour(aerate flour before measuring) 

1 T fresh baking powder

1/2 t baking soda 

1 t kosher salt

Whisk together

Set aside


3/4 c stiff full fat Greek Yogurt ( I used 5% Fage)

Place in freezer 15 minutes 


1 egg

1/2 c full fat buttermilk 

Beat egg into buttermilk 

Set aside


Egg wash 

Beaten egg 

1 t water


Preheat oven to 400 f

Lay a sheet of parchment on a sheet pan

Cut yogurt into flour mixture 

Add buttermilk mixture, incorporate using rubber spatula 

Dust flour onto a piece of parchment 

Add dough and pat out to 1/2 inch thickness, use extra flour if dough is too sticky 

Cut biscuits out with a floured 2 inch cutter

Place 2 inches apart 

Brush with egg wash

Bake 16 minutes until golden brown
