Dried Blueberry Oat Pancakes



























 

 

 

2 Timothy 1:14


[14] By the Holy Spirit who dwells within us, guard the good deposit entrusted to you.



These were delicious!!


1 cup old-fashioned rolled oats

1 cup milk, regular 

Soak oats in milk for 10 minutes.


2 large eggs, beaten

1 T vanilla 

1 T melted clarified butter, plus more for cooking

2 T tablespoon granulated sugar

Mix with fork.

After 10 minutes, add these above ingredients to oat-milk mixture.


2/3 c AP flour

1/4 c dried blueberries

2 t baking powder

1/4 t kosher salt

1/4 t ground cinnamon 

Stir these wet ingredients into dry ingredients, just to incorporate.

Let sit 5 minutes before frying in skillet.


Add 1 t clarified butter, heat skillet to medium, add 2 pancakes. 

I made mine 3-4 inch rounds.

When bubbles appear, flip.

Serve with butter and syrup.

Preheat the oven to 375 degrees. 

For this recipe, you will need 4 whole roasted chiles.

Fill each pepper with mixture of Monterey Jack Cheese, Quesadilla cheese and cream cheese.


Place the peppers into a casserole dish.


Beat the eggs

2 Eggs


Mix the eggs and milk together.

3/4 Cup Milk


Whisk the eggs and milk with flour, cumin, salt, and pepper. 

It's not necessary for the mixture to be completely smooth.


1/4 Cup Flour, 1/2 teaspoon Cumin, 1/2 teaspoon Salt, 1/2 teaspoon Black Pepper


Pour the mixture of eggs and flour over the chiles that have been stuffed.

 

Add a layer of cheddar cheese to the top.

2 Ounces Shredded Cheddar Cheese


For a little smoky flavor add Paprika to top of cheese.


 Bake the dish for around 30 minutes or until the cheese has melted to your desired consistency.

 

Jalapeño Cornbread with Poblano Cream Corn

Make your regular recipe of Cornbread.

To that add:

1 chopped fresh Jalapeño ( I seeded mine but if you want hot leave some seeds)

1/4 c Poblano cream corn*

1/4 Cheddar 


Made 1 (6) inch skillet of Cornbread.


Cook per your usual directions.

Asian Spicy Black Pepper Beef



































Proverbs 14:34

2 Left over cooked seasoned leftover Filet of beef, sliced thin and cut into strips

2 small green bell peppers, seeded and cut into strips

1 small red bell pepper, seeded and cut into strips 

1 small sliced onion

1 t olive oil

Sauté peppers and onions in oil.

Add beef, stir to warm.

Add sauce, reduce to thicken.

Serve over rice.


Sauce 

1 c beef broth

1/2 t black pepper

2 T roasted Garlic, mashed 

1 t pickled Ginger, mashed

2 T Brown sugar

1/4 c Soy sauce 

2 t Chinese rice vinegar

1 t Toasted sesame oil 

1 T Cornstarch 

Mix and set aside.


Roasted Poblano Bourbon Gravy for Steaks

4 skillet grilled seasoned Filets 


Gravy 

1/4 c chopped roasted Poblano 

1/4 c chopped roasted small onion

1/8 c sliced Leeks 

1 T beef base dry seasoning

1 T Butter

1 T Roasted Garlic

1/2 t Sugar

1/2 t Cumin

Splash of Half and half 

1 capful of bourbon 

1/4 c water

1/2 t crushed peppercorns 

1/2 of a lime juiced


1 T cornstarch to thicken


Sauté onions, Leeks and peppers in butter.

When tender, add rest of gravy ingredients. 

Add thickener.

Serve over a heavy drizzle over steak.
