Instant Pot Pork Tenderloin Medallions and Gravy


























 

 

 

 

Psalm 96:1-6


Worship in the Splendor of Holiness


    [1] Oh sing to the LORD a new song;

        sing to the LORD, all the earth! 

    [2] Sing to the LORD, bless his name;

        tell of his salvation from day to day. 

    [3] Declare his glory among the nations,

        his marvelous works among all the peoples! 

    [4] For great is the LORD, and greatly to be praised;

        he is to be feared above all gods. 

    [5] For all the gods of the peoples are worthless idols,

        but the LORD made the heavens. 

    [6] Splendor and majesty are before him;

        strength and beauty are in his sanctuary.



2 pork tenderloins, trimmed of silver skin and not more than 1 &1/2 inch thick


Gravy

2 c chicken stock


Cornstarch slurry

3 t cornstarch 

3 t cold water


Seasoning mix

1 t olive oil

1 T roasted garlic mashed

1/8 t each salt and pepper

2 t each, dried oregano, sage, thyme and rosemary 

Mix and rub on both sides of both Tenderloins.


Heat IP on sauté button to hot.

Add 2 t clarified butter.

Brown Tenderloins for 2 minutes each side, remove to plate and deglaze IP with stock.

Cut off IP.

Add rack and place Tenderloins on rack.

Add lid.

Bring pressure up, cook 0 minutes and cut off.

Pork will cook from built up pressure.

After 15 minutes, remove lid, check temp. 

It should be around 142 degrees.


Cover pork with foil and let rest 3-5 minutes.

Slice pork into Medallions.

Add a cornstarch slurry to IP and thicken gravy.

Add Medallions into gravy.

Serve over sticky rice or mashed potatoes.

4 large Croissants, chopped


Filling

1 c chopped deli ham

1 t Olive oil

1/4 c leeks

1/2 t each rosemary and thyme

Pinch of nutmeg

1 T chopped Fennel bulb *optional

1 T roasted garlic

1/4 c Sauvignon Blanc 

1/2 c Gruyere 

1/2 c Gouda 

1/4 c Havarti 


Sauté veggies until translucent, add ham.

Add wine.

Remove from heat.

Add cheese.


Custard

3 beaten eggs

Salt and pepper 

1 & 1/2 c half and half


Add bread to custard, stir in to coat.

Let sit 5 minutes.

Stir in filling.

Add to buttered 8 or 9 inch round Pyrex casserole bowl.

Bake preheated 375 degree over for 35-45 minutes.

Tasty Ritz Party Crackers for Two




















Psalm 95:3


    [3] For the LORD is a great God,

        and a great King above all gods.



1 sleeve of Ritz crackers

Bourbon Ridge Ham(thin sliced and cut into squares)

Havarti Cheese(cut into squares to fit cracker)

Lay crackers in a parchment lined pan, flat side up.

Layer cheese then ham, top with other cracker.

Spoon butter drizzle over each one.

Preheat toaster oven to 375 degrees.

Bake 12 minutes or until lightly browned.


Butter drizzle 

2 T unsalted butter( crackers are salty)

Worcestershire sauce

Dijon mustard

Dried Onions

Poppy seeds

Melt butter in bowl in microwave.

Stir in ingredients.

Spoon over crackers.

Potato Leek Fennel Gratin































Psalm 90:1-2


Book Four


From Everlasting to Everlasting

    [1] Lord, you have been our dwelling place

        in all generations. 

    [2] Before the mountains were brought forth,

        or ever you had formed the earth and the world,

        from everlasting to everlasting you are God.



3 medium Yukon Gold potatoes, use mandolin slicer and sliced 1/8 inch cut

2 t salt

Cover with water, bring to boil, boil 1 minute and drain in colander

Set aside


Veggie mix

1/2 c sliced thin leeks

1/2 c sliced thin Fennel bulb

2 T roasted garlic

1/2 t thyme

Salt and pepper

2 T butter 

Sauté veggies in butter, just till tender.

Set aside 


Preheat oven to 375 degrees.

Cook, uncovered 45 minutes 



Cheese Sauce

1 can evaporated milk

1/8 c olive oil

Splash Apple cider vinegar 

1 c Gouda, grated 

1 c Parmesan, grated 

1/4 Sauvignon Blanc

1 T butter

1/4 t sea salt

1/4 t dry mustard

1/4 t ground coriander 

Cornstarch to thicken


Spread a little cheese sauce in bottom of Casserole pan.

Layer 1/2 of the potatoes, then half of the veggies and repeat.

Bake, uncovered.

Crunchy Chicken Parmesan

Chicken cutlets

1 c Parmesan, shredded 

1 c Mozzarella, shredded 


Sauce

2 T olive oil

2 t roasted garlic 

Salt and pepper

1 t Oregano

1 t basil

1 t dried onion flakes 

1/4 t red pepper flakes

1 t sugar

1/4 Cabernet Sauvignon 

1 28 oz crushed tomatoes 

1/8 c three cheese Italian blend 


Sauté all seasonings and garlic in oil.

Add wine, tomatoes and cheese.

Simmer on low for 20 minutes.

Set aside.


To assemble:

Thin layer of sauce on bottom of pan

Cutlet

Spoonful of sauce on cutlet

Parmesan

Mozzarella 


Broil until cheese melts.

Serve with crusty bread and a salad.
