Moist Juicy Tender Chicken Piccata



































An America's Test Kitchen recipe!



7 I bless the LORD who gives me counsel; in the night also my heart instructs me. 

8 I have set the LORD always before me; because he is at my right hand, I shall not be shaken.  - Psalm 16:7-8



2 boneless skinless chicken breast, slice in half lengthwise, pounded flat and cut into cutlets, salted and peppered, set aside

Lightly toss chicken in flour.

2 T olive

Fry 2-3 minutes each side.

Cook in several batches, adding 2 T of oil each time 


Sauce

1 T peanut oil 

1 Shallot, chopped 

Cook in the pan the chicken was cooked in, scraping up bits.

Add 1 t roasted garlic

1 c chicken broth

1/2 of a Lemon, cut into tiny chunks

1/2 of a Lemon juiced

Add cooked cutlets back in simmer 4 minutes.

Remove chicken to platter.

Remove pan from heat.

Add 3 T butter.

Melt.

Add:

2 T capers

1 T chopped parsley.

Pinch of salt.

Spoon sauce over chicken.

Lil Smokies Gruyere Biscuit

Little smokies, split in half lengthwise 

Scallions, chopped

Biscuits, I used frozen Grands buttermilk 

Gruyere cheese, shredded

Fried hard egg



Bake biscuits, set aside.

Brown split smokies, drain on paper towels.

Fry egg hard.

Split biscuits and add egg, scallions and smokies.

Ricotta Cream Sauce Chicken Pot Pie

2 ready made regular pie shells

Egg wash


1 grated medium Carrot 

1/4 c mushrooms, sliced 

1/4 frozen English peas

1/8 c Leeks, sliced 

1/8 c Celery, sliced 

1 -1/2 c Rotisserie chicken breast, chunks

1 T Clarified butter

1/2 t dry onion soup, I make my own

1/2 t sage

1/4 t rosemary 

1/4 t thyme

1/2 t Umami seasoning 

1/2 t Mrs Dash table

Pinch black pepper

1 t chicken base seasoning 


Put butter in heavy bottom pot.

Add veggies and seasonings, sauté 5 minutes.

Add chicken, add all sauce ingredients, sauté 2 minutes to combine.


Poke holes in bottom crust with fork.

Ladle chicken veggies mix into crust.

Add top crust, cut 4 slits.

Brush with egg white.

Bake preheated 375 oven for 20-25 minutes.


Sauce list

1/2 c half and half

1/2 c water

1/2 t cornstarch 

1 T ricotta sprinkled with pinch of sugar mixed with 1 T half and half, set aside

Avocado Salsa Verde Meatless Nachos

Tostado chips, I used On the Border Cantina style thins


1/2 of a ripe avocado, mashed

3 T chopped Scallions

3 T Mexican style Cheese of your choice 

2 T Salsa Verde, I use Herdez 

Pinch of sugar


The correct way to tell if an avocado is ripe: the stem end should be slightly soft when you gently push around it.


Cut avocado in half.

Take a spoon and go around the peel.

This will loosen the half.

Add to plate.

Take a fork and mash it.

To the mashed avocado, add scallions, then cheese, ending with salsa verde.

Take the pinch of sugar and scatter over the top.

Place tostado chips around the edges.

Deli ham or turkey, I used both, Boars Head Bourbon Ham and Maple Honey Turkey breast

Pimento cheese, I used original Palmetto 

Green onions, chopped

Fried egg, season with seasoned salt, Mrs Dash table and Umami seasoning from Trader Joe's  

Pete's hot sauce

White Mt bread, Publix 

Clarified butter



Fry eggs hard in non stick skillet, pour Pete's on cooked eggs, set aside.

Melt butter in non stick skillet.

Spread pimento cheese on one side of bread, sprinkle green onions on cheese, place bread size down in butter, add meat.

Add top, weight down, flip when crispy.

Insane!!
