Restaurant Style Chicken Lo Mein







































Behold, at that time I will deal with all your oppressors. And I will save the lame and gather the outcast, and I will change their shame into praise and renown in all the earth.  - Zephaniah 3:19



1 large chicken breast sliced really thin across the short side 

2 T cornstarch 

2 T Lo Mein sauce

Mix and set aside for 10 to 15 minutes while you prepare veggies! 


I 10 oz thin spaghetti noodles, cooked al dente, drained and toss in 1 t olive oil


1 stalk Celery, sliced thin

1 T roasted Garlic

2 large Green Onion, minced

2 T ginger, minced

2 c thin sliced cabbage

2 T olive oil


Stir fry veggies in medium hot oil until tender.

Push to side of skillet, add seasoned chicken, stir fry over medium heat.

Chicken will cook quickly. 

It's done when it becomes slightly caramelized.

Add noodles, stir around.

Add Lo Mein sauce, stir around. 


Lo Mein Sauce

1/2 c low sodium Soy sauce

1/4 c sugar

2 T cooking wine

1 t oyster sauce

1 T Hoisin

1/4 t toasted sesame oil




Toasted Coconut Oreo Balls

14 full size Oreos, finely ground in food processor 

1/4 c toasted coconut 

3 oz softened room temp cream cheese


Using a fork, mix Oreos, cream cheese and coconut.

Roll into balls, freeze 20 minutes.


For rolling balls

6 oz semi sweet chocolate, chopped, melted in microwave 

Dip chilled balls and place on parchment

3 T smoked almonds

4 oz sweet coconut, toasted 

8 oz white chocolate, chopped

1/4 c heavy cream

1 cap full of Jim Beam


Process almonds 15 seconds in mini food processor to a fine ground.

Toast coconut in toaster oven 350 degrees for 10 minutes, stirring a few times.

Cool.

Process coconut 15 seconds in mini food processor.

Set aside.

Melt white chocolate and cream in microwave for 30 seconds and stir to melt.

Stir in almonds and Bourbon.

Pat into an pan that's covered in foil.

Refrigerate for 20-30 minutes. 

Cut into small squares and roll into falls.

Roll in toasted coconut.

Freeze until firm. 

Store in airtight bowl till serving.

Cottage Cheese Egg White Scramble

1/2 c Egg whites

1/4 c Cottage cheese

Skillet sprayed with non stick spray


Seasonings to your taste


Mrs Dash table blend

Seasoned salt 

Umami seasoning from Trader Joe's


Dehydrated Hash Brown Green Onion Tenderloin Sauté

An ej original recipe!


1 c dehydrated hash browns, hydrate with water for 10 minutes, drain well on paper towels

2 green onion, chopped

1/2 c Seared and thin sliced Tenderloin, I keep this in the freezer  

Olive oil

Salt 

Pepper


Place oil in skillet, heat to medium, toss in onions, season.

Cook until tender, add Tenderloin.

Add hash browns, mash flat with spatula. 

Cook 5 minutes, flip, cook another 5 minutes until crispy.

Serve with Texas Pete's hot sauce!
