15 Minute Rotisserie Pollo Asada Tacos

Fast easy delicious!!! 
An ej original recipe!!

Rotisserie chicken, chopped or pulled
According to how many you have to serve, 
For 2 people I used 1 breast and 2 thighs.
We ate off of it twice.

Seasoning is Mardi Gras seasoning

2 T dried rosemary
2 T chili powder
1 T kosher salt
1 T garlic granules 
1 T dried oregano
1 T creole seasoning like Tony's 
1-1/2 t cumin
1 t dry mustard
1 t black pepper

Store in air tight containers.
This is enough for a bunch of wings or chicken parts. 


1/8 c Whiskey
1/8 c either Apple Cider or orange juice
1/2 red onion
2 T seasoning for 1 breast and 2 thighs
Olive oil

In a skillet add a drizzle of oil, throw in thin sliced onion, sauté the add chicken and seasoning.
Turn off heat to add whiskey and juice, then turn heat back on medium, stir mixture around.

Toppings
Bowl of pico de gallo
Fresh chopped cilantro 
Queso Fresco, take fingers and roll around 
Heated Crunchy taco shells

Cabbage Carrot Light Pasta Stir Fry

Dried angel hair, cook al dente and set aside

1 diced Shallot
1 t olive oil
2 c coarse shredded Cabbage 
1 large Carrot, matchstick cut
1 c Rotisserie chicken, shredded 
1/2 t Umami powder
1/8 c Mirin 
2 T Mushroom soy sauce
Black pepper to taste

Add oil to skillet sauté shallots then add carrots and cabbage, then all the rest of the ingredients except pasta.
Turn off heat.
When cabbage is soft, use tongs to stir in pasta.

This is a nice light delicious Asian dish!!

Just Simple Pasta Light Water Sauce





































8 And the Scripture, foreseeing that God would justify the Gentiles by faith, preached the gospel beforehand to Abraham, saying, "In you shall all the nations be blessed."

Lightly salted Pasta water
Fresh pasta

Cook pasta for 1 minute. 
Remove to colander.
Reserve all water.


Add ins

1 c Artichoke hearts, quartered 
1/4 c Peas
1/4 c Sun dried tomatoes in oil
2 c Rotisserie chicken
1/2 t Umami powder
2 T half and half (optional)


Add sun dried tomatoes to skillet. 
Heat till sizzling.
Next add all other ingredients.
When veggies are tender add pasta water. 
Turn heat to medium simmer.
You add as much as you want to get the desired amount of sauce.
At this point you can add light cream but it's really not necessary.
So light and delicious!!

Apple Cider Creamy Mustard Sauce Pork Medallions




































"O LORD, make me know my end and what is the measure of my days; let me know how fleeting I am!  - Psalm 39:4


2 small Pork tenderloins

Marinade

1 c Apple Cider
1 T Salt
1 T Sugar

Add ingredients to zip lock. 
Add meat and marinate for 1-2 days.

Cut into 2 inch Medallions.
Turn up on flat sides and pound just to tenderize.
In a large skillet add 2 T olive oil, very lightly salt and pepper, sear on medium until the Medallions looks grilled on both sides.
Remove to a plate and set aside.
Reserve drippings.

Glaze ingredients 

1 t thyme
1 T roasted garlic
1 diced Shallot 
2 t grainy mustard
1/4 c Apple Cider 
1/4 c half and half

To the skillet, add the shallots, cook until tender.
Cut skillet off and bloom thyme in oil. 
Turn heat back on and add garlic, grainy mustard, cider and cook until ingredients are incorporated. 
Add light cream and begin to reduce until you begin to get a sauce.
Simmer 3 minutes.
Add Medallions back in, lightly cover with foil and turn off heat.
This dish is absolutely delicious! 
I served with sticky white rice and steamed Cajun seasoned broccoli.

Barbacoa Beef for Crunchy Loaded Tacos



































This is my original version of the Taco Mama shredded beef taco!

40 The LORD helps them and delivers them; he delivers them from the wicked and saves them, because they take refuge in him.  - Psalm 37:39-40



2-3 lbs Beef chuck roast cut into 1/2 inch chunks
3 T roasted garlic
2 t chipotle in Adobo 
1 4 oz can chopped green chili 
1 sweet onion, chopped
1 small lime, juice only
2 t Apple cider vinegar 
1 t sugar
1 t bay leaves powder
1 T oregano 
1 T toasted cumin powder
1 t salt
1 t black pepper
Pinch of clove powder
3/4 beef broth 

Add beef and all other ingredients to a Dutch Oven. 
Braise uncovered on top of stove to brown meat, about 15 minutes.
Braise, covered in 350 degree oven for 3 hours until you can pull Beef using 2 forks.
Pull beef until its finely shredded and let sit in juices. 
On top of stove, turn heat to medium and add 1/2 c water to meat and juice, bring to slight rolling boil and cook 15 minutes. 
Drain most of the juice from beef before you fill taco shell.
Store meat in juice in a sealed container.
Use crunchy shells and add desired toppings.

Fresh cilantro
Queso Fresco or unexpected cheddar from Trader Joe's
Pico d gallo or salsa
Lettuce
Sweet Onions
Fresh chopped cilantro
