Thai Air Fryer Street Fries



























"You shall not take the name of the LORD your God in vain, for the LORD will not hold him guiltless who takes his name in vain. - Exodus 20:7





2 hand full of Frozen fries, I used fast food fries
Drizzle a tiny amount of olive oil and toss
Lightly salt

Add to basket of air fryer.
Put into air fryer.
Select 380 temp.
Select 10 minute time.
Remove basket, shake and flip to insure even cooking.
Select 380 temp.
Select 3 minutes.
Replace basket and finish cooking.
Remove and place on plate.
Drizzle sauce over fries!
Yummy!!

Drizzling Sauce

3 t rice wine vinegar
1 t soy sauce, I used mushroom 
1 t chili garlic oil, I used Lee Kum Kee 
1 t sugar
1 t fresh grated ginger
2 small green onions, split and diced
A light sprinkle of garlic granules 

Mix and set aside.

Steamed Cajun Brussel Sprouts

So simple and so delicious!

1 bag Brussels sprouts
Lightly Drizzle Light Olive oil
Seasoned salt, according to taste
Cajun seasoning, according to taste


Clean, cut in half, and take off tough outer leaves of Brussels sprouts.
In a microwave steamer, cook 5 minutes.

Apple Cider Honey Glazed Seared Salmon

2 lb piece of Salmon, I got mine at Costco

Basting butter
1/4 c Clarified butter, softened 
1 t Olive oil
1 t Rub, I used my homemade
1/2 t Old bay 
1/2 t black pepper

Reserve what's left for a final baste.



Apple Cider Glaze
1/4 c Apple cider
1/4 c teriyaki sauce
1/8 c honey
3 T Apple butter
1/2 t red pepper flakes
1 T Lemon juice

Cut salmon into the size servings you want. 
I got 10 good size pieces.
Place on a sheet pan covered in parchment.
Use basting butter to coat top of Salmon.
Preheat oven to 350 degrees.
Let Salmon sit for 30-45 minutes. 
Heat a non stick skillet to medium.
Add 1/2 t clarified butter with a tad of olive oil.
Place Salmon seasoned side down.
Cook 2-3 minutes each side according to Salmon thickness.
You can see the Salmon changing color on its side as it cooks.
You want it under cooked.
Now coat the Salmon again with the left over butter basting sauce followed by the glaze.
Cook in oven uncovered 4 minutes.
Bring out of oven and let cool for 4 minutes before serving.

Sous Vide Skirt Steak Fajitas

Loosely based on an America's Test Kitchen recipe!



24 hr marinade
1/4 c soy sauce
3 T roasted garlic
1/2 c oil
3/4 c Pineapple juice

Skirt steak cut into 3 pieces.

Fill inner Instant pot with hottest tap water.
Add to Instant pot, set to warm setting.
Add marinated meat to ziploc. 
Remove air.
Submerge in water bath.
Clip to side of pot.
Cook, lid loosely on, for 80 minutes.

Remove from ziploc. 
Discard marinade.
Pat meat dry.

Veggie fry ingredients 
2 t pineapple juice
2 t mushroom soy sauce

Veggies
Bell peppers
Onions

Add clarified butter and olive oil to iron skillet.
Fry veggies, add veggie fry sauce.
Add meat and sear in a hot cast iron skillet.
Cover with foil, let rest for 5 minutes.
Add meat to board and thin slice against the grain.
Serve with toppings and tortillas.


Spinach Queso

1 c White American, chopped
1 c Quesadilla cheese, it's already shredded 
2 T Butter
1 t Chicken base seasoning 
1 large can Evaporated milk
1 small box frozen Spinach, thawed and squeezed dry
1 small Onion, diced
1/4 c Pickled jalapeño slices, diced
3 T Pico de gallo
Salt and pepper 
Cornstarch slurry to thicken

On medium heat, melt butter, add onion and base seasoning.
Sauté until onion is softened.
Add Spinach then pico de gallo, evaporated milk, cheeses, and peppers.
Heat until cheeses melt, add slurry to thicken.
Salt and pepper to taste.
