Fried Squash and Green Tomatoes


































Great is our Lord, and abundant in power; his understanding is beyond measure.  - Psalm 147:5



An ej original!

3 medium yellow Squash, chopped small
3 medium green tomatoes, chopped small
1 onion, chopped small
1 Raw egg
Seasoned salt, to taste
Light sprinkle of Garlic granules 
Black pepper, to taste
1/4 c Cornmeal
1/8 c Flour
1/8 c Panko

Enough olive oil to cover bottom for pan frying.


Add chopped veggies to a large bowl.
Crack a whole egg into them and stir with a spatula.
Sprinkle dry ingredients over veggie-egg mixture.
Veggies should be very slightly wet with a coating of the dry ingredients.
Fry in hot oil letting the mixture sit until the bottom is crusty, then flip to get the other side crusty.
Do this flipping a few times until veggie are soft and crispy.
Yummy!

DeKuyper Cherry Brandy Pan Fried Beef Fillets

An ej original recipe!

4 Beef Fillets
Seasoned meat tenderizer( lightly season both sides)
Rub of your choice( I make mine) lightly season both sides 
2 T Clarified butter
1 t olive oil
1/8 c water
2 T Cherry Brandy
2 T Worcestershire sauce

Season beef with the tenderizer and the rub.
In a non stick fry pan add clarified butter and a tad of olive oil.
Heat on high and add beef to sear on both sides. 
Turn heat to medium cook 4 minutes, flip cook another 2 minutes. 
Add water and Worcestershire sauce.
Cover loosely with foil for 1 minute, flip repeat.
Add Brandy, cut off heat, cover with foil and let sit 1 minute, flip, cover and let sit 1 minute.
Rest covered for 5 minutes.
Yum!

Gochujang Thai Pork

An ej original recipe!!

Boneless Country Pork Ribs, cut into 3 inch chunks
1 t Gochujang
1 Onion
1 Pink Lady Apple
1/2 t seasoned salt
1 T olive oil
1/2 small lime squeezed on pork

Squeeze lime on pork.
Season with salt.
Rub Gochujang on pork.
Sear in a cast iron Dutch oven.
Add the rest of the following ingredients.

2 t Hickory liquid smoke
2 t Soy sauce
2 t Worcestershire sauce
1 t Powdered mustard
1 c water

Cover, bake in preheated 350 degree oven for 1-1/2 hours. 
Stir and chunk.
Put under broiler to crisp up.
Serve as Nachos, on tortillas or buns.

Delicious, versatile recipe! 
Good on tacos, BBQ, sandwiches, peas or beans.

1/2 of a medium head Cabbage, thick shredded, mine made 4 cups
1 any color Bell pepper, cut in strips
1 large Onions, chopped
3 large Green tomatoes, chopped
3 large Red tomatoes, chopped
1/8 c Sea Salt

Prepare veggies.
Add to bowl.
Place salt on top and using hands, toss.
Set aside.

Add the below ingredients to a large sauce pan.
Heat until sugar is melted.
Add veggies and cook on medium for 30 minutes.
Add to clean jars, wipe lid rim, slightly tighten lids and boil in water for 30 minutes.
Set on counter to cool and listen for the tops to pop.


1 t Dry mustard
3 T Pickled JalapeƱo,chopped
1 t Aleppo Pepper
1 t Red pepper flakes
1-1/2 c white Vinegar
1-1/2 c Sugar
1/2 c Bread and butter pickle juice and the seasoning from bottom

Gochujang Potato Casserole









Hear my prayer, O LORD; give ear to my pleas for mercy! In your faithfulness answer me, in your righteousness!  - Psalm 143:1


An ej original recipe!


Yummy yummy yummy!!


8 -10 Potatoes peeled, chopped 1 inch chunks
12 oz can evaporated milk
1/2 c water
1/2 c half and half
1/8 t baking soda
2 T butter
2 t salt
1 t pepper
1/4 t - 1/2 t Gochujang or more according to heat preference 

Add to pot and bring to boil, stirring repeatedly.
Adjust to low but still keep stirring, it'll burn!
Cook 15 -20 minutes, potatoes should only be knife tender.
Pour into a 13x9 pan, add topping. 
Bake preheated 375 degree oven for 20 minutes or until lightly browned.
Top should be crunchy!

Topping
3 T melted butter
1 c panko
1 c grated fresh Parmesan 
Mix with fork.
