Beef and Broccoli

































Therefore, stay awake, for you do not know on what day your Lord is coming. - Matthew 24:42



2 pieces of Beef Boneless Short Ribs, got mine at Costco 
Spread baking soda on both sides.
This helps tenderize the beef.
Let sit for 20 minutes.
Rinse, pat dry and slice against the grain into thin uniform pieces.
Add to marinade.

Soy Vay Garlic Hoisin, found at Walmart

Marinade for Beef:
1 T Cornstarch 
1 t Sesame oil
1 T Brown sugar
2 T Soy sauce
2 T Mirin


2 c Broccoli 
1 Leeks, chopped
Set aside to add after Beef is cooked.


1 T Ginger
1 T Garlic
1 T Olive oil
In a large skillet, heat oil to hot, cut heat off and add ginger and garlic.
Cook until fragrant.

Cook the beef in the same skillet you used for the garlic and the ginger.
Heat skillet to hot.
Using tongs, remove beef from marinade.
Add beef pieces until bottom is covered.
Cook 3 minutes then flip.
Turn heat to medium cook another 3 minutes.
Add Broccoli, leeks, garlic and ginger back in and cook 2 minutes or until Broccoli is slightly tender.
To finish add 1/4 c Soy Vay Garlic Hoisin. 
Serve over sticky rice.

Mexican Pulled Pork Tapas with Avocado Salsa Verde

Avocado Salsa Verde






































For you have delivered my soul from death, yes, my feet from falling, that I may walk before God in the light of life.  - Psalm 56:13


1 avocado, chopped
1/2 c  salsa verde
3 T onion, chopped
Squeeze of lime
1 t sugar
1 T Mayo
1/2 t toasted cumin
Mix in food processor.

Pulse in a small food processor just till incorporated.

Sumac Corn on the Cob


































5 You have multiplied, O LORD my God, your wondrous deeds and your thoughts toward us; none can compare with you! I will proclaim and tell of them, yet they are more than can be told. 
6 In sacrifice and offering you have not delighted, but you have given me an open ear. Burnt offering and sin offering you have not required. 
7 Then I said, "Behold, I have come; in the scroll of the book it is written of me: 
8 I delight to do your will, O my God; your law is within my heart."  - Psalm 40:5-8




4 ears fresh Sweet corn, I got mine at Aldi
Sumac
Seasoned salt

Microwave corn on a plate covered 2 minutes each side.
I could fit all 4 ears on the plate.
Delicious!

Sumac Spiced Roasted Chicken
































5 Consequently, when Christ came into the world, he said, "Sacrifices and offerings you have not desired, but a body have you prepared for me; 
6 in burnt offerings and sin offerings you have taken no pleasure. 
7 Then I said, 'Behold, I have come to do your will, O God, as it is written of me in the scroll of the book.'" 
8 When he said above, "You have neither desired nor taken pleasure in sacrifices and offerings and burnt offerings and sin offerings" (these are offered according to the law),
9 then he added, "Behold, I have come to do your will." He does away with the first in order to establish the second.
10 And by that will we have been sanctified through the offering of the body of Jesus Christ once for all.
11 And every priest stands daily at his service, offering repeatedly the same sacrifices, which can never take away sins.
12 But when Christ had offered for all time a single sacrifice for sins, he sat down at the right hand of God,

1 organic whole chicken, spatchcock chicken, bought mine at Aldi
Olive oil

Optional but oh so good!!
Note: You can add some precooked potatoes in the water to cook under chicken.
Microwave whole potatoes for 3 minutes each side, cool, peel and slice into rounds.
Slice an onion and a carrot too.  
Carrots will be slightly crunchy.
Add 1 t salt to water.

Rub:
3 T Sumac
2 T Toasted cumin
1 T Smoked salt
A few turns of Cracked black pepper

Liberally oil chicken, both sides.
Liberally season chicken, both sides.

Preheated 500 degree oven, 55 minutes, middle rack or until breast is 165 degrees and thighs are 175 degrees.
Place on rack in pan with 1/2 c water in bottom.
Place spatchcock side up for 15 minutes, then flip chicken to breast side up.
Cook remaining time and check temp. 
This was so good.
The sumac gives a slightly lemon taste.
Served with sumac corn on the cob.
