Pressure Cooker Red Wine Gravy Beef Stew




















11 You will be enriched in every way to be generous in every way, which through us will produce thanksgiving to God.
12 For the ministry of this service is not only supplying the needs of the saints but is also overflowing in many thanksgivings to God. - 2 Corinthians 9:11-12





1 lb. Beef tips sprinkled with flour
1 T olive oil
1 T Roasted garlic, mashed 
1 c Mushrooms, sliced 
1 Leek, chopped
1 T Celery, chopped
2 T Chicken base seasoning
Cracked black pepper
4 Potatoes, chopped 
4 Carrots, chopped
3 T of Cento tomato paste( in tube)
1 c Red wine (I used Cabernet Sauvignon)
1 c Water
1 T Fresh herbs, I used rosemary, oregano and sage mixture ( sprinkle on finished dish)


Place oil in hot pressure cooker, add celery, leeks, mushrooms and garlic.
Sauté until the mixture is tender, add lightly floured beef and slightly brown.
Add wine, tomato paste, seasonings and water.
Put on lid and build pressure, cook 30 minutes.
Take off pressure, remove lid and add carrots and potatoes.
Build pressure and cook 10 minutes. 
Sprinkle with herbs, serve with crusty bread.

Jamie's Chicken White Bean Chili

This chili won an award!!



Whole chopped Rotisserie Chicken
1 Can Cannellini Beans
1 small can Green chilis
1 Onion, diced
1 T Garlic
Salt and pepper
1/2 t Cumin
1 Quart Chicken stock
Jar of Salsa Verde 

Garnish
Cheese
Sour cream

Sauté onion and garlic in 1 t butter in small skillet.
Add to pot.
Add stock to crock pot, salsa verde, beans, chilies,chicken and all seasonings.
Cook on high for 2 hours.

Spicy Honey Soy Beef And Chicken With Honey Glazed Pecans

1 c Left over Beef ( I used thin slice Rib eye)
1 c Left over Chicken ( I used Mardi Gras wings from Publix
1 c Broccoli florets
1 small Onion, thin sliced 
1 large Carrots, matchstick cut
2 c cooked left over angel hair pasta( I used fresh pasta)

Stir fry all except pasta in 1 T of olive oil.
Add sauce ( recipe below) to de-glaze pan. Add pasta and top with chopped honey glazed pecans.

Sauce
1/8 c Soy sauce
1/8 c Honey
1/8 c Mirin
1/2 t Chili oil
Sprinkle of Garlic granules 
Mix and set aside.

Roasted Hatch Chili Cheese Burger

2 Seasoned and cooked burger ( I used sprouts 85/15 burger meat and seasoned salt)
Sliced Tomato
Cheddar cheese

Roasted Hatch chili sauce

1 hatch chili, roasted and chopped
Pinch of Onion powder
Pinch of Garlic powder
Pinch of Oregano
1/2 c water

Add seasonings and water to chili.
Cook water out and mash chili.
Spread on bun, place cheese on other side of bun, add cooked burger to melt cheese and top with tomato.

Diy Garlic Herb Boursin

1/2 stick of butter, softened 
1 stick of Cream cheese, softened
1 t Tuscan seasoning
1 t rosemary 
1 t dill
1 t garlic granules 
1 t Italian cheese blend, I use Trader Joe's 
Smoked Salt to taste

Mix well with a fork.
I used all dried herbs but fresh would be good also.
Serve mixed in mashed potatoes, on a steak, on crackers, on a baked potato or on bread.
