Two Cheese Egg White Fried Bologna Tortilla Breakfast Pizza
Hebrews 10:12

scrambled and seasoned Egg whites
fried bologna
sharp white cheddar cheese
mozzerella cheese
small totillas
On a heated cooktop, add tortilla and cheeses. Toast until cheese melts and tortilla is crisp. When cheese is melted, add fried bologna and scrambled egg whites. May top with your favorite salsa before serving.
Pulled Pork Cornbread Dressing
By this we know love, that he laid down his life for us, and we ought to lay down our lives for the brothers. - 1 John 3:16
3/4 lb. pulled pork(I use Jim n Nicks)
1 pan cornbread
1 Leek, sliced
1 stalk celery, sliced
Fresh sage
3 Toasted croissants, chopped
1 can of cream of celery
1 can of cream of chicken
1/4 c Heavy cream
Stock made from pulled pork, 4 T chicken base seasoning, 1 qt. water (reserve some stock and pork for gravy)
Make stock and set aside.
Make cornbread and set aside.
Crumble corn bread in a deep pan, I use 13x9 foil pans.
Add croissants, veggies, sage, enough stock so that the crumbled bread mix is swimming in stock.
Add soups and spoon out some of the pork from the stock and add too.
Mix well and add cream to top.
Bake in a preheated 425 degree oven until browned and toasted.

Instant Pot Corned Beef with Cabbage Carrots Onions and Potatoes
10 For it was fitting that he, for whom and by whom all things exist, in bringing many sons to glory, should make the founder of their salvation perfect through suffering.
11 For he who sanctifies and those who are sanctified all have one source. That is why he is not ashamed to call them brothers, - Hebrews 2:10-11
1 (2 1/2 lb. corned beef brisket with seasoning packet)
Olive oil
1 small head of Cabbage, quartered
2 T roasted Garlic
8 medium yellow butter Potatoes, quartered
2 large Carrots, cut into chunks
1 Onion, quartered
2 c water
Rinse beef, grease fat side with oil.
Set instant pot to meat, add rack and 2 c water.
Place beef, fat side up and add seasoning packet to fat side.
Secure lid.
Set time to 90 minutes and bring pressure up.
After the 90 minutes, place a tea towel over release valve and take pressure off.
Remove meat and rack, add meat to a 13x9 foil pan and cover with foil.
Cut beef against the grain and serve.
Add veggies to juice, beginning with potatoes, garlic, onions, carrots and ending with cabbage.
Bring pressure back up and cook 7 minutes.
Take pressure off, remove veggies.
Add to the same pan as the beef, keeping the meat and veggies separate.
Spoon drippings over all.

Quick Rotisserie Chicken Asian Veggie Stir Fry with Peanuts for Two

This was ready really fast and it was delicious!!!!
2 c Rotisserie chicken, pulled
1 t olive oil
1/2 c dry roasted Peanuts
2 c Broccoli, florets
1 Carrot, matchstick cut
1 Onion, chopped
1/4 t Garlic granules
1 t Sesame oil
1 T Hoisin sauce
2 T Sweet chili sauce
2 T Soy sauce
2 T Worcestershire sauce
1 c Royal rice, left over (optional)
1 c Water
Place olive oil into skillet and heat. Add onions, carrots and broccoli and cook until just slightly tender. Add chicken, water, all seasonings and rice. Stir fry until sauce thickens. Add peanuts and serve.

Instant Pot Turkey Breast

1/2 fresh turkey breast ( I got mine at Sprouts, it was a 2 1/2 lb. bone in, it was $9 or so
Brine ( gallon size ziploc bag, 2 c water, 1/8 c salt and sugar, 1/2 t Garlic granules, 1 t dried basil, 1 t parsley, 1 t dill, 1 t smoked paprika)
Brine turkey breast, in fridge, for at least 2 hrs.
Drain and pat dry.
Grease turkey breast with oil and add your favorite rub.
Sear in skillet in a little oil.
Set instant pot on poultry setting, add 1 1/2 c water and the rack.
Place seared breast on rack and cook under steam for 25 minutes, internal temp has to be 165 degrees.
Let pressure drop and remove breast.
Reserve drippings for gravy.
Set breast on a cutting board and let sit for 15 minutes before carving or pulling.
Gravy
Drippings ( I had almost 2 cups)
1/4 c Flour
1/2 c Half and half
3/4 c - 1 c Milk
Heat 1/2 c of drippings in a skillet, add flour and whisk until flour has absorbed liquid.
Add the rest of the drippings whisking until it begins to slightly thicken, add milk and half and half.
Whisk until it's the consistency of gravy.
Salt and pepper to taste.
