Jim Beam Chocolate Pecan Pie

FRIDAY, AUGUST 22, 2014 








Romans 12:12
Rejoice in hope, be patient in tribulation, be constant in prayer.


1 (9 inch) deep dish pie shell 1/2 c white sugar
1/2 c brown sugar
1 c light corn syrup

1/2 c butter
4 eggs, beaten
1/8 c bourbon
1 t cinnamon
1/4 t salt
3 oz. semisweet chocolate bar, chopped 

1 c chopped pecans

Preheat oven to 325 degrees.
In a medium glass bowl melt butter in microwave.
Combine sugars and corn syrup into warm butter, stirring constantly, until sugars dissolves. Cool slightly.
In a large bowl combine beaten eggs, bourbon, cinnamon and salt.
Mix well with a whisk.
Slowly pour sugar mixture into egg mixture, whisking constantly.
Stir in chocolate and pecans.
Pour mixture into pie shell.
Bake in preheated oven for 50 to 55 minutes, or until set and firm.

Freezing Fresh Herbs In Olive Oil

Chop your selection of fresh herbs.
Spray with non-stick spray. 
Place in an ice cube tray.
Cover with olive oil.
Wrap in plastic wrap and label.
Freeze, then pop out. 
I put mine on a paper plate, then in a freezer bag. 
I have had success with sweet basil, cilantro, sage, spicy oregano, spicy basil, oregano, and flat leaf parsley. The herbs stay beautiful and green!

Avocado Crema





Romans 11:36

1 large ripe avocado
1/4 c sour cream
2 T cream
3 t lime juice 
1 t honey
1 T Sriracha hot sauce
1 roasted clove garlic
1/2 t roughly chopped fresh cilantro
1/2 t cumin
1/2 t kosher salt

Mix well with a fork, mashing avocado. This stuff is delish! Serve on top of serving of Chicken Tortilla Stack.

1/2 stick of Cream Cheese, softened
2 T taco seasoning 
2 T cream

3 c  shredded rotisserie chicken
1/2 can black beans, rinsed
1/4 c salsa
1/2 c onions, diced
2 T fresh cilantro
1 can enchilada sauce

3  medium size flour tortillas 
3/4 -1 c cheddar Cheese

HEAT oven to 375ºF.

Mix softened cream cheese, taco seasoning and cream until blended. Combine next 5 ingredients in large bowl. Add half the cream cheese mixture; mix lightly.

Spray round casserole with non-stick spray.
Spread a thin layer of enchilada sauce in bottom of casserole pan.
Place a tortilla in casserole pan.
Spread 1/3 of the chicken mixture onto tortilla, 1/3 of the cheese, add another tortilla, a little sauce then the chicken mixture, then 1/3 of the cheese. Repeat. Top with remaining cream cheese mixture and shredded cheese; cover.

Bake 25 min. or until heated through, uncovering for the last 5 min.

To serve, add a spoonful of avocado crema.

Shrimp Dan Dan Noodles

1/2 of a box of angel hair pasta
1/4 c chicken broth(I use chicken base seasoning and add water) 
1 t cornstarch
1 1/2 t soy sauce
1 1/2 t oyster sauce

1/2 T sweet chili Thai sauce
1/2 T Hoisin
4 chicken tenderloin, cut into tiny bite-sized pieces 8 frozen Shrimp, tail removed
1 t roasted garlic
1/2 t fresh ginger
2 T scallions or leeks, sliced matchstick cut
1/2 c crushed sweet and salty peanuts
Salt and pepper to taste

Lightly sprinkle red pepper flakes

Garnish: crushed peanuts, matchstick cut cucumber slices Prepare noodles in boiling water and drain.
In a bowl, stir cornstarch into broth until dissolved. Add soy sauce, oyster sauce, hoisin and Thai sauce. Mix well.
Bring a oiled large skillet to medium heat. Add chicken, ginger and garlic. Cook and stir for about 4 minutes, until chicken is cooked through. Add shrimp, cooking until thawed. Don't over-cook.
Stir sauce mixture and add to skillet. Add noodles. Cook and stir until sauce has slightly thickened and noodles are hot, about 2 minutes.
Add salt, pepper and red pepper flakes.
Add cucumbers and crushed sweet and salty peanuts.
