Guinness Like Cake































Psalm 61:1-3


To the choirmaster: with stringed instruments. Of David.

        listen to my prayer;

Butter spring form pan and cut out a circle of parchment for bottom


1/2 c light Beer 

1/2 c coffee liqueur ( I used Bourlaine brand)

1 T black strap Molasses 

Mix together and set aside


10 T  (1 stick plus 2 T 

3/4 c unsweetened cocoa

2 c superfine sugar

3/4 c sour cream

2 large eggs

1 T vanilla extract

2 c AP flour

2 1/2 t baking soda


Icing 


1 1/4 c confectioners' sugar

8 oz spreadable cream cheese 

1/2 c heavy cream


For the cake: 


Heat oven to 350 degrees. 

Butter a 9-inch spring form pan and line with parchment paper. 

I only had a 10 inch one so I used it.

It did change the baking time to 35 minutes.

In a large saucepan, combine Beer mixture and butter. 

Place over medium-low heat until butter melts, then remove from heat. 

Add cocoa and superfine sugar, and whisk to blend.


Make super fine sugar by putting in mini processor. 

Remeasure because it did change to a larger amount. 


In a small bowl, combine sour cream, eggs and vanilla; mix well. 

Add to Beer mixture. 

Add flour and baking soda, and whisk again until smooth. 

For a 9 inch, pour into buttered pan, and bake until risen and firm, 45 minutes to 1 hour. 

See 10 inch bake time above.

Test with toothpick, should come out clean.


Place pan on a wire rack and cool completely in pan.


Icing

Using a hand mixer, mix confectioners' sugar, cream cheese and heavy cream and blend until smooth.


After cooling, frost top only!

An ej original recipe!



Spray large 12 cup muffin pan with non stick spray 


Preheat 350 degree oven 

20 minutes bottom rack

Rest of bake time move to next position rack

Bake 30-35 minutes until custard is set


3 large croissants torn into small pieces (enough for 12 cups)

Fill muffin cups and set aside


2 c ham chopped

1 t olive oil

1 c Leeks

1 T roasted Garlic 

2 c baby Spinach 

Sauté and set aside


Custard

4 eggs, beaten

1/8 c liquid egg whites

1/8 c heavy cream

1/2 t Seasoned salt

1/4 t garlic granules 

Pinch of Pepper

Whisk


Topping

2 c cheese 


To build Cups

Add same amount of croissant pieces to each muffin cup

Using a gravy ladle, spoon custard over croissant pieces

Mash down

Add 1 T of meat filling on top of croissant egg custard 

Top with cheese

Done when custard is set and toothpick comes out clean 


May serve with hollandaise sauce!

Pork Carnitas Taquitos (Rolled Fried Taco)

Carnitas pork

 

 

Flour tortillas, fajita size (softened)

Spread cream cheese

Onions, thin sliced

Grated cheese

Tomato, diced


Peanut oil (2 inch) deep

Medium size Skillet 


Heat to 350 degree


Spread soft cream cheese liberally on tortillas 

Place filling and toppings close to one edge and roll tightly 

Place seam side up, brown and roll to other side, brown and drain on paper towels

Salmon Tacos with Jalapeño Slaw

Left over salmon 

Heat in skillet with water and 1 t taco seasoning


 Slaw

1 c shredded cabbage  

1 t Mayo

1 t Olive Oil

1/8 c chopped Onion

1 T chopped Pickled Jalapeño 

1 t Honey 

Salt and pepper to taste 


Hard shell tacos


Toppings

Onions 

Slaw 

Picketed Jalapeño 

Cheese

Breakfast Stuffed Croissants Bread Bowls

4 large croissants, cut top out and press into a bowl shape

Set aside


3 beaten eggs

1/4 c liquid egg whites

1/2 c grated cheddar cheese

1 c bacon bits, crisp up in microwave 

3 T green onion, chopped 

2 T heavy cream



Preheat oven to 375°F. 

Place parchment on jelly roll pan.

Cut the top of each croissant with a knife.

In a medium bowl, mix cheese, bacon, and green onion.

In another medium bowl, beat eggs with cream. 

Combine with the bacon mixture.

Spoon the egg-bacon mixture into the prepared croissant bread bowl. 

Place them on a baking sheet.

Bake in the oven for 20 mins, or until golden brown and egg mixture is set.
