Beef Tenderloin Tails with Shallot and Red Wine Gravy

























 

 

 

Psalm 52:6-7


    [6] The righteous shall see and fear,

        and shall laugh at him, saying, 

    [7] “See the man who would not make

        God his refuge,

    but trusted in the abundance of his riches

        and sought refuge in his own destruction!”



Gravy prep

2 c beef broth

1 c Red wine ( I used Cotes-du-Rhône found at Costco)

Simmer and reduce to half, set aside.

Whisk in 2 T tomato paste concentrate.

Add 1/2 c diced cooked mushrooms.


Leeks prep

1-1/2 c sliced Leeks

1 T olive oil

Salt and pepper

Sauté in oven on 350 degrees for 15 minutes, stirring a few times.

Set aside.


Beef prep

Drizzle olive oil over beef

Lightly Salt and pepper beef adding a pinch of garlic granules, thyme and rosemary 

Using a cast iron skillet, sear all sides of beef tails in 1 T bacon grease, cook 15 minutes in a 375 degree oven until temp of 135 degrees. 

Remove to a plate. 

Tent with foil.

Reserve drippings.

To the drippings, whisk in 2 T flour.

Add gravy prep mixture and 1 t sugar.

Simmer until thickened.

Taste and adjust seasonings if necessary.

Slice beef into medallions, add to gravy.  

Serve with garlic mashed potatoes and salad.

Stuffed Strawberry French Toast

An ej original recipe!



1/4 inch or 1/2 inch sliced Brioche bread slices( your choice) I got mine from Sam's


I made 3 stuffed French toast (6 slices)


Strawberries in light syrup

3 c chopped strawberries 

1 c sugar 

Stir until syrup forms.

Keep in fridge.


Stuffing

1/4 c Spreadable cream cheese

1 T Agave sweetener

3 T diced Strawberries in syrup, diced 


2 beaten eggs 

2 T Heavy cream

Coating for French toast 


Fry in butter

Serve with berries on top, maple syrup and whipped topping 

Add ham for extra yumminess!

Fresh Strawberry Cobbler



































Romans 4:18


[18] In hope he believed against hope, that he should become the father of many nations, as he had been told, “So shall your offspring be.”



3 c fresh chopped strawberries 

1 c sugar 

Stir until berries give off juice and make a syrup.

Set aside.


Dry ingredients 

1 c AP flour( aerate flour for accurate measure)

2 t baking powder 

1/2 t salt

1/2 c white sugar

Whisk together.


1 c full fat milk

1 stick of melted butter, cooled

1 t vanilla extract

Gently stir in liquid ingredients into dry ingredients, just till combined.

Using a slotted spoon, drain berries and gently distribute berries over top of cobbler.

Do not stir. 

Serve with vanilla ice cream!


Bake preheated 375 degree oven for 35-40 minutes 


Greased glass pan 11x 8-1/2

Peruvian Pan Roasted Chicken Marinade



































Matthew 16:26


[26] For what will it profit a man if he gains the whole world and forfeits his soul? Or what shall a man give in return for his soul?



Whole Chicken or just parts

( I used legs)



2 T Fresh Rosemary chopped or 2 t dried

2 T Fresh Oregano chopped or 2 t dried

3 T roasted Garlic

1/4 t toasted cumin

1/8 c white vinegar

1/4 c Soy sauce

1 T Hoisin 

1 t honey

1 lime juiced

1/2 of a light beer

Blend in blender


24 hr Marinade in bag in fridge


Bake preheated 400 degree oven, un-covered.

Cook 25 minutes and flip.

Cook on rack in a 13x9 foil pan in oven with marinade drizzled over and olive oil drizzled over.

Internal temp should reach at least 165 degrees.

Let Chicken rest for 10 minutes.

 

Make a cilantro  sauce for serving.

Psalm 49:7-9

        and can never suffice,

        and never see the pit.



Stir fry 1/4 c chopped onion and 3 T roasted mashed garlic in 1 t olive oil.

Cool.


To a blender add:

Cooled onion/garlic mix 

1/2 c Mayo 

2 T vinegar

4 t yellow mustard

3/4 t salt

1/2 t black pepper

1 T Honey

1 seeded and chopped Jalapeño 

1 bunch cleaned chopped cilantro 


Pulse to incorporate.

Drizzle over chicken etc!

Store in fridge.
