Baking Bag Chicken
































Ecclesiastes 9:5-6


[5] For the living know that they will die, but the dead know nothing, and they have no more reward, for the memory of them is forgotten. [6] Their love and their hate and their envy have already perished, and forever they have no more share in all that is done under the sun.


 

An ej original recipe!

 

 

Up to 8 lb baking bag

1 t flour in bottom of bag

1/4 c Sauvignon Blanc

Lemon that was squeezed 


5-6 lb whole Chicken, trimmed of excess fat, spatchcocked to lay flat and injected with solution


Injection Solution

1/8 c Clarified butter

1/2 c Chicken stock

1 T bourbon

1/4 c Maple syrup 

1 T Worcestershire sauce

1/2 of a lemon squeezed

1 T smoked garlic seasoning

1 t onion powder

1/2 t white pepper 

1/2 t black pepper

Put in salt, onion powder and garlic, peppers in coffee grinder 

and pulse to dust

Heat for 15 seconds in microwave.

Whisk

Strain

Cool

Put in tall red plastic cup

Fill injector 

Gently Inject chicken in many spots

Grease chicken on outside with olive oil or butter, salt, pepper and garlic, dust with smoked paprika 

Put in chicken, tie legs, flip wings under

Bake, preheated 400 degree oven for 1 and 1/2 hour or until breast reaches 160 degrees

Let sit for 20 minutes so juices will redistribute

Temp with rise another 5 or more degrees while resting

Reserve broth and placed sliced chicken in broth

Serve with garlic Parmesan mashed potatoes, salad and peas

Two Meat Grinder on Focaccia with Baby Arugula




































Ecclesiastes 3:17-22

Such a good sandwich!!


Trader Joe's Parm and sun dried Tomato focaccia 

Boars Head Pepperoni, pre-cut thin sliced 

Boars Head Honey Maple Turkey, sandwich sliced

Baby Arugula 

Olive tapenade *

Thin as possible cucumber, carrot and onion


Toast bread.

Microwave meat for 30 seconds.

Place olive tapenade on toasted bread, add meats, Arugula, cucumber, carrot and onion.

Olive Tapenade 

1 c diced Castellano olives

1/2 c diced fire roasted red peppers 

1 small Shallot, diced

1 T hot Greek peppers, diced

2 T capers, diced

2 T roasted garlic

Put in a mini food processor and pulse to dice.

Remove to a bowl.

Add:

1/4 c olive oil

2 T red wine vinegar

1 t sugar

1/2 t each of dried oregano, cilantro and basil

Stir and let flavors meld for at least an hour.

Mexican Chicken with Cheese Sauce over Rice





























 

Jeremiah 5:28-29


        [28]     they have grown fat and sleek.

        and they do not defend the rights of the needy.

        and shall I not avenge myself

        on a nation such as this?”



An ej original recipe!



1 Chopped chicken breast, 1/2 inch size

Seasoned with

1/2 t Wood Fired garlic

1/4 t Salt and pepper

1/4 t Toasted cumin 

Mix together and toss chicken 

Hit with a squeeze of lime

Set aside for 20 minutes


Fry in 1 T of oil, until chicken is done, cooks pretty quickly because it's chopped

Do not overcook 


Batch of buttered long grain rice


Cheese sauce

1/4 c Velveeta 

1/8 c Half and half 

1/8 c Hoop cheese

1/8 c Quesadilla cheese

Melt until thickened

Set aside


Toppings

Squeeze of lime

Chopped Green onion

Dollop of Sour cream

Cilantro 


Place rice on bottom, top with chicken then cheese sauce, green onions and cilantro 

Serve with tossed salad

Mini Maple Sausage McGriddles (Copy Cat)

2 c buttermilk complete pancake mix

1-1/2 c water

1 lb cooked sausage, drained 

1 c cheddar cheese 

1/4 c maple syrup 

Mix.

Put in mini muffin tin 3/4 full.

Bake 400 degree oven for 10 -13 minutes.

Refrigerate and microwave as needed.

1 T heaping of olive tapenade

1/4 c Mayo

1/8 c Olive Garden Italian dressing

Blend with a whisk

Set aside


Salad 

1 Head of Romaine, chopped

Mandolin Thin sliced cucumbers, onions, carrots

Tiny tomatoes 


Greek pepper rings


Parmesan shavings


Meats

Boars Head Pepperoni, chopped 

Boars Head Maple Honey Turkey, chopped
