Fried Chicken Greek Bow Tie Pasta Salad
































Psalm 61:1-3

An ej original recipe!



Dressing 

1/8 c Olive Garden dressing

1/8 c Mayo

Drizzle of olive oil

1 t juice of Pepperoncini jar

1 t sugar

1 t seasoned salt

1/2 t black Pepper 

Pinch of red pepper flakes 

1/2 t each oregano, rosemary and thyme

1 t roasted garlic



2 left over fried chicken tenders, heated and sliced


2 c Bow tie Pasta cooked al dente set aside


Salad fixins

Lettuce strips

Cucumbers chunks

Cherry tomatoes, sliced in half

Onions thin slices

Pepperoncini strips

Unexpected Cheddar crumbled

Bolillo Dough Cinnamon Rolls

This dough is awesome!


1 batch of Bolillo dough*

I used half to make cinnamon rolls and half to make bolillos.


I patted dough down to make a rectangle shape. 

Be careful not to get dough too thin.

I rubbed spreadable butter all over leaving a 1/2 inch empty space close to edge.

I mixed 3/4 c sugar and 3 T cinnamon together and sprinkled over butter.

Roll tightly and pat ends in.

Pinch seams.

Cut in half then each half in rolls.

I got 12.

Spray pan heavily with nonstick.

Bake middle rack, preheated 375 degrees for 20 minutes or until golden brown.

Cool 10 minutes before frosting.


Frosting

1/4 c spreadable cream cheese 

1/4 c spreadable butter

1 t vanilla 

1/4 c powdered sugar

Mix well with a fork.

Bolillos*, cut in half, add cheese and toast

Refried beans or a can of bean dip

Cheese slices 

Crispy black pepper bacon or Chorizo 

Fried egg

Avocado creama or just the slices

Sour cream

Chipotle Mayo


Additional topping

Pico de Gallo

2 Bolillos, cut in half, inside soft bread  removed so it can be stuffed 

Clarified butter for skillet toasting of Bolillos 


Fried chicken nuggets 

Sliced Onions

Lettuce strips

Havarti Cheese slices

Chipotle Mayo

Yeasty Fast Rise Bolillos





































Psalm 52:6-7

        and sought refuge in his own destruction!”

3-3/4c AP flour

2 T yeast (3 packets active dry)

1-1/4 c warm water

1/4 c olive oil

5 T sugar

1 beaten egg

1-1/4 t kosher salt




Add 2 T of yeast to 1.25 cups of warm water. Whisk 5 T of sugar and 1/4 c olive oil.  Let sit for 5-10 minutes.


Add 3.75 cups flour, 1-1/4 t salt, and 1 egg. Mix with a spatula and then place onto a parchment sheet on counter.  Knead with your hands until you have a smooth ball of dough. Add additional flour if it's sticking to your hands.

Using spatula cut into eight equal parts. Roll into balls.  


Flatten into oval shapes. Flip 1/4 of the disk towards you and seal. Now pull that part towards you and seal again. Continue until you have a tube of dough. Give a quick roll while putting pressure on the ends to get the traditional bolillo shape.


Cover and let rise for 10-30 minutes. Using kitchen shears, snip a lengthwise 1/4 inch deep slit on the bolillos just before baking. 

Bake preheated oven for 8-15 minutes at 425F.

Cool.
