Eggplant Chips


































Isaiah 42:1


    [1] Behold my servant, whom I uphold,

        my chosen, in whom my soul delights;

1 Purple egg plant, sliced thin like potato chips

Milk to cover in plastic bag

Soak for 3 days



Before frying, dry with paper towels.

Slightly salt, I used seasoning salt.

Dredge in a mixture of 1/2 c AP flour, 1/4 c cornstarch and 1/4 c cornmeal.

Shake before frying 


Peanut oil for frying

I used my Fry Daddy

1 Boneless pork butt cut into equal 1/3 c pieces

Olive oil for sauté

Seasoning

2 coke minis


Add a little olive oil and heat IP on the sauté setting, add pork, it should begin to sear.

Sear both sides.

Add your favorite rub, I used my * Mardi Gras seasoning, a little salt and pepper.

Change setting to meat, set time for 1-1/2 hours. Add 2 coke minis. Set on pressure.

After cooking, let IP pressure come down naturally.

Remove to plate and pull with 2 forks. 

Add your favorite BBQ sauce.

Honey Walnut Asian Chicken Stir Fry





































Hebrews 4:12-13

[13] And no creature is hidden from his sight, but all are naked and exposed to the eyes of him to whom we must give account.



An ej original recipe!




Honey butter walnuts

1/2 c walnut pieces

1/4 t clarified butter

Toast in oil and add walnuts.

Set aside.


1 Boneless skinless chicken breast

Cut into 1/4 inch chunks

Add chicken to soak sauce and leave in sauce for 2 hrs, in fridge.


Chicken soak sauce

1 T Mushroom Soy sauce

1 T Mirin

1/4 t Toasted sesame oil

1/4 t sushi Ginger juice


Veggies

1 medium Onion, sliced thin

1 c Broccoli florets

1 T mashed roasted garlic 

1/2 t olive oil


Stir fry onions, garlic and broccoli in oil for 3 minutes.

Add chicken, stir fry until slightly brown.

Cooks really quickly.

Add walnuts.


Pressure Canned Pork Stew






























Hebrews 4:6-7


[6] Since therefore it remains for some to enter it, and those who formerly received the good news failed to enter because of disobedience, [7] again he appoints a certain day, “Today,” saying through David so long afterward, in the words already quoted, 


    “Today, if you hear his voice,

    do not harden your hearts.”




3 lb pork butt, trimmed, sliced then cut into chunks

1 lb bag large Carrots, cut in chunks

10 medium Yukon Gold Potatoes, chopped 

3 large Onions

Chicken base stock

1 t each rosemary, oregano, thyme 

1/2 t powdered bay leaf

1/2 t white vinegar to each jar


Drizzle a tiny bit of olive oil over pork.

While pork is searing, wash and prepare veggies and seasoning

Bake off lightly salted and peppered pork chunks in a preheated 400 degree oven on parchment lined sheet pan.

Cool and set aside.

Prepare canner according to manufacturer.

Have jars warm and ready.

Fill jars, adding in layers. 

Put 1/2 t of seasoning in each jar.

Add vinegar.

Add stock leaving 1 inch headspace.

Remove air bubbles.

Clean jar tops with vinegar, place lid and finger, seal just finger tight.

Makes 7 quart jars.

Process 90 minutes for quarts.

Cool.

Wash jars.

Store.

This can also be made with Beef.

Spinach Stuffed Oven Roasted Chicken Breast




































Hebrews 3:13


[13] But exhort one another every day, as long as it is called “today,” that none of you may be hardened by the deceitfulness of sin.



Preheat oven to 400 degrees.

Bake 35-40 minutes or until internal temp is 165 degrees.



Stuffing

3/4 c spreadable cream cheese 

1 large hand full of baby Spinach, my hands are small so I did 2 handfulls

1 T Roasted Garlic, mashed

Mix together and set aside.



4 Boneless skinless chicken breast 

Using a cutting board, make slits, along the length of the breast, being careful not to cut through.

Place parchment on a large sheet pan.

Drizzle olive oil on parchment.

Place breast on parchment and spread out.

Pull apart the slits to accommodate the filling.

Add 1 t of filling to each slit.

Very lightly salt and pepper breast.


Topping

Shredded Parmesan 

Shredded Mozzarella 

Lightly cover each breast with both of the cheeses.
