Italian Deli Turkey Chef Salad


































Psalm 130:3

An ej original recipe!



1/4 lb Deli Honey Turkey breast #1 slice ( I like Boars Head)

3 T Olive Garden Italian dressing

2 hard boiled eggs

1/2 head of Iceberg Lettuce, chopped 

1 Carrots, sliced thin

1 Cucumbers, sliced thin 

1/2 of a Sweet Vidalia onions, sliced thin

1 ripe Tomato, chopped 

Grated Feta or Parmesan 


Boil eggs, cool and set aside.

Wash salad ingredients.

Drain dry.

Build salad.

Roll up turkey and slice into 1/4 inch strips.

Add salad dressing to skillet, heat and add turkey, sauté just until heated through.

Cover top of salad greens with turkey.

Sprinkle with preferred cheese.

Peel eggs.

Cut up eggs and place on top of turkey.

Add salt, pepper and salad dressing.

I also season with Trader Joe's Umami and Mrs. Dash table blend.

Skillet Pork Tenderloin with Fig Shallot Smoked Sausage and Feta Reduced Pan Sauce

        and he will make straight your paths. 

    [7] Be not wise in your own eyes;

        fear the LORD, and turn away from evil. 

    [8] It will be healing to your flesh

        and refreshment to your bones.


 

 

An ej original recipe!


1 Rotisserie flavor pork Tenderloin, rinsed, carefully split down middle, pounded thin. 

Cut into 2 pieces, fill and tie 

Greek seasoning 

Salt and pepper

Season with Greek seasoning, salt and pepper

Set aside.


2 T butter


Filling

10 fresh figs, chopped

1/8 c Feta crumbles

1 Shallot, diced

1/4 c chopped smoked sausage

1/2 t bacon grease

Fry ingredients in bacon grease until reduced.

Set aside.


Place skillet in cold oven.

Turn oven on 450 degrees.

When oven reaches temp, remove skillet and add butter then add filling to Tenderloin and tie.

Cook on bottom rack for 14 minutes on each side.

Internal temp should be 155- 160 degrees.

Rest 10 minutes and slice with sharp butcher knife.

Rich Chocolate Fudge Prune Brownies

    [10] and you have made them a kingdom and priests to our God,

350 degree preheated oven for 25-30 minutes.

Line a 8x8 pan with foil, leave about a 2 inch foil overhang to easily remove brownies.


Brownies are done when toothpick comes out clean.


1/4 c chopped prunes

2 T water

Place in food processor to make a paste.

Set aside.


1/2 c milk chocolate chips

2 T butter, chopped 

Melt over boiling water.

Set aside.


1 c white sugar

1 large egg plus 1 egg white

1 t vanilla

Very quickly cream sugar, eggs, prune paste and vanilla into chocolate mixture.


1/2 c plus 1/4 c AP flour

1/3 c cocoa powder

Whisk together.

A little bit at a time, incorporate dry ingredients into wet ingredients just till combined.

Batter will be thick.

Evenly spread in pan.

Mardi Gras Boneless Breast Skillet Chicken

2 large boneless chicken breast, cut in half and brined in sugar salt water for 5 hrs


Mardi Gras seasoning *

2 T Butter


Heat skillet starting in a cold oven to 450 degrees. 

Dry off brined chicken.

Lightly sprinkle seasoning.

Set aside.

When skillet comes to temp, throw in butter and chicken.

Bake 10 minutes, flip and repeat.

Rest 10 minutes.

Sous Vide New York Strip Steak
































Romans 13:1-2


[1] Let every person be subject to the governing authorities. For there is no authority except from God, and those that exist have been instituted by God. [2] Therefore whoever resists the authorities resists what God has appointed, and those who resist will incur judgment.



 

Pretty good, not as good as a Filet.


 

Cook time 1-1/2 to 3 hrs (I cooked 2 hrs)

Cook temp 130 degrees


2 strip steaks 1-1/2 - 2 inches thick

Salt and pepper

1/4 c oil


Place in bag, single layer, add oil.

Remove air.

Sous Vide according to above directions.

Remove and pat dry.

Rest for 5 min.

Sear 1 min each side, in 3 T oil.


Finishing sauce

1 T reserved oil

1 Shallot, minced 

1/2 t Fennel seed

1/2 c chicken stock

1/4 c white wine

1 1/2 t Dijon 

Reduce for 6 minutes 


Add 1 T chilled butter.

1 t tarragon 

Salt and pepper
