Instant Pot Sous Vide Asian Chicken

An ej original recipe!!


155 degrees 

3 hours


2 Boneless large chicken breast, cut in half lengthwise 


Sauce

1/8 c Sweet Chili Thai sauce

1/8 c Hoisin 

1 T Mushroom Soy sauce

1/8 c Sake

1 t Toasted sesame oil 


Add sauce to gallon freezer ziplock.

Add chicken pieces.

Mash air out, double bag, repeat.

Weigh down bag with case knives.

After cook time, sear in heated skillet drizzled with olive oil.

Instant Pot Sous Vide Honey Maple Turkey Breast

1 bone in, skin on turkey breast, I got mine from Aldi, frozen, thaw in fridge for 2 days 


De-bone turkey.

Cut in half.

Trim fat.

Salt and pepper.

Save bones for stock.


Cooking Spice liquid

5 T Dijon mustard

3 T Honey

3 T Maple syrup

3 T Brown sugar 

1/2 t Molasses

4 Bay leaves

1 T Maple extract 

Pinch of Thyme

Mini coke 

1 t Pickled Ginger liquid

3 t Spice seasoning from ham or make your own


Bring spice liquid to boil and simmer for 15 minutes, cool.


158 F degrees water temp

4 hours cook time

Double bag with gal zip lock freezer

Mash air out and weight down, on inside of bags with case knives.

Cool down bags in ice bath if you are going to serve later.

Store in fridge.

Sear off in buttered or oiled skillet after shaking on the ham spice seasoning or just serve plain slice and serve.

Mixed Pasta Salad

2 c Bow tie pasta

2 c Angel Hair pasta 

Cook al dente and set aside.



Dressing

1/4 c Olive Garden dressing

1/8 c Mayo

1 T Seasoned salt 

1 T cracked black Pepper

3/4 c grated Parmesan 

3 T diced Greek pepper slices 

1 t Greek pepper juice

Whisk well!


Add ins:

1 English Cucumber, chopped

1 Sweet onion, thin sliced

2 c Sliced Grape tomatoes

1 large can sliced black olives, drained

Instant Pot Sous Vide BBQ Pork

1 pkg Boneless country pork Ribs

1/2 t Salt

1 T Mardi Gras seasoning*

1 coke mini 

2 plastic gallon freezer bags


Sous Vide setting

Heat 160 degrees

Cook time 5 hours

Shred while hot, drizzle with BBQ sauce and a little olive oil, place under broiler to slightly char.

Instant Pot Sous Vide Unglazed Spiral Sliced Honey Ham

1 spiral slice fully cooked honey ham, I got mine from Aldi, my IP is a 6 qt so I had to de-bone and remove slices 


Spice liquid

5 T Dijon mustard

3 T Honey

3 T Maple syrup

3 T Brown sugar 

1/2 t Molasses

4 Bay leaves

Pinch of Thyme

Mini coke 

1 t Pickled Ginger liquid

3 t Spice seasoning from ham or make your own


Bring spice liquid to boil and simmer for 15 minutes, cool.


Using 2 gallon zip lock bags, equally divide ham slices, set in a stack, add 1/2 of spice liquid, zip bag leaving a half inch opening, remove air by pressing, zip and repeat until bag collapses against ham. 

Double bag each and press out air.

Refrigerate one. 

Press Sous Vide button to set temp and time.

I did 160 degrees for 4 hours.

At end of cooking, I removed ham slices and put in a plastic bowl with lid. 

Discard liquid.

Bring temp back up and repeat.

The other half of ham I plan to glaze and torch.
