Cooked Basmati rice, I keep Instant Pot cooked in freezer

1 T chopped Pimentos from jar

2 T chopped Greek peppers from jar

2 T roasted Garlic

1/4 c chopped Green Onions

1 t Greek seasoning

2 T Butter

3 T Parsley

1/2 t Sugar


Stir together.

Heat slightly.

Serve.

Buc-ee's Knock Off Breakfast Brisket Soft Taco




































"You are the LORD, you alone. You have made heaven, the heaven of heavens, with all their host, the earth and all that is on it, the seas and all that is in them; and you preserve all of them; and the host of heaven worships you. - Nehemiah 9:6



Buc-ee's sliced Brisket 

Crispy Hash browns 

Egg fried hard, seasoned 

Fresh pico de gallo

Frito's Refried bean dip

Shredded Quesadilla Cheese

Soft taco flour tortillas 



Make pico and set aside.

Heat tortillas over open flame or in microwave.

Place in warmer or wrap in foil.

Make hash browns and at end of cooking add chopped Brisket, set aside.

Fry egg, set aside.

Spread bean dip on warm tortillas, top with egg, cheese, Brisket/hash browns mixture, the pico.





Alabama Greek Chicken

Whole cut chicken, cut down, place slits in chicken 


 

Marinade 30 minutes to 2 hours


 

2 T Fresh rosemary, 

2 T Fresh thyme

Lemon 3 in strips, chopped 

5 Garlic, rough chop

1/4 c olive oil

1 T kosher Salt

1-1/2 t Dried Oregano 

1/2 t ground coriander 

1/4 t red pepper flakes

1/4 black pepper

Mix, add chicken.

The slits in chicken are to soak up juice.



Bake 425 degrees 30 minutes, close to broiler in skillet, internal temp 165 white meat and 175 dark meat.

Turn oven to broil.

Spoon pan juice over chicken.

Place close to broiler for 3 minutes to brown chicken.

Watch closely.

Remove chicken.

Rest in juices for 10 minutes.

To the pan juice add:

1 T Lemon juice

Stir and cover with pan juices!

Serve with Greek potatoes or Greek rice!

Maple Butter Sprouts

An ej original recipe!


Brussels Sprouts, take outer leaves off and cut in half 

Salt and pepper to taste

1 t water


Steam in microwave, lid on for 4 minutes.

I used my Pampered Chef steamer.


While sprouts are still warm, pour in a glass or foil pie pan and lightly drizzle maple syrup over.

Toss in 2 T of butter until butter is melted.

Put under broiler to slightly toast and brown.





Herbed Baby Red and White Potatoes






























 

7 You, O LORD, will keep them; you will guard us from this generation forever. 

8 On every side the wicked prowl, as vileness is exalted among the children of man.  - Psalm 12:7-8





2 lbs baby red potatoes 

Using a Dutch oven just cover with water.

Add 2 T salt.

Bring to boil, then reduce to simmer 20 minutes to knife tender.

Drain, wipe our Dutch Oven.

Add 3 T of the Parsley Salsa Verde to Dutch oven.

Add 2 T butter.

Heat and add potatoes, slightly press potatoes with wood spoon just to slightly open potatoes, stir, serve.
