Steak Gravy Poutine



























For I know that my Redeemer lives, and at the last he will stand upon the earth.  - Job 19:25




1 c Left over steak Steak, I used filet, I keep it in the freezer
1 c chopped small Cheese curds, Sprouts carry these 
4 c cooked French fries, I used Ore Ida fast food fries, season with garlic and season salt
Scratch Gravy 

Scratch Poutine Gravy

2 T Butter
2 T leeks, could use Onion or shallot
1 t Garlic
1/2 c steak, chopped
1 t chicken base seasoning
2 T flour
1& 1/2 c water
Splash of Worcestershire sauce
Splash of vinegar
Splash of ketchup 
Cracked black pepper
1 t red wine

Melt butter, sauté leeks, steak and garlic.
When leeks are done add flour, stir, then add water, wine, ketchup, Worcestershire, vinegar and seasonings. Whisk until thickened, simmer until reduced, set aside.

Fry the potatoes and drain.
To assemble, place fries on bottom, then sprinkle curds around on hot fries and drizzle gravy all over.
This is a Canadian dish and it's very rich and delicious!!!

Apple Lime Pork Carnitas




























17 What is man, that you make so much of him, and that you set your heart on him, 
18 visit him every morning and test him every moment?  - Job 7:17-18



Ingredients 
2 lb. Boneless Pork, back ribs (got mine from Sam's club)
1/2 c salsa
1/2 c water
1 apple, chopped
Smoked salt and cracked black pepper to taste
2  t Hickory flavor liquid smoke
2  T Worcestershire sauce  
6 inch Tortillas, warm

Toppings
Fresh lime juice 
Avocado, mashed and spread on tortilla 
Cheddar Cheese, you could use Monterey Jack 
Mild or hot Salsa( I used mild but Habanero would be great)


Set oven to 350 degrees.
Sauté pork in a Dutch oven.
When pork is a little crusty, add all on the ingredients list.
Still well.
Cover tightly with foil, bake for 2 hours. 
This recipe makes its own sauce. 
Pull pork with tongs and stir into the sauce left from cooking.
To serve,  warm tortillas, spread mashed avocado on tortillas, then add pork, cheese, squeezed lime and salsa.

Alton's Dry Rub for BBQ Chicken































For godly grief produces a repentance that leads to salvation without regret, whereas worldly grief produces death. - 2 Corinthians 7:10




1 T chili powder
1 T curry powder
1 t adobo powder
1 t ground cumin
1 t smoked paprika
2 t cocoa powder
1 t sugar



Soak chicken in honey, salt and water for 1 1/2 hours. 


Place in gal. Ziploc. 
Add dried chicken pieces and shake.
Grill, pan sear or bake.

Easy And Delicious Pasta Fagioli





























1 Paul, a servant of Christ Jesus, called to be an apostle, set apart for the gospel of God,
2 which he promised beforehand through his prophets in the holy Scriptures,
3 concerning his Son, who was descended from David according to the flesh
4 and was declared to be the Son of God in power according to the Spirit of holiness by his resurrection from the dead, Jesus Christ our Lord,
5 through whom we have received grace and apostleship to bring about the obedience of faith for the sake of his name among all the nations,
6 including you who are called to belong to Jesus Christ, - Romans 1:1-6




6 meatballs (recipe under the Italian tab this blog)
1 small Onion 
1 stalk of  celery
2 T Cento tomato paste 
1 c uncooked pasta ( I used ziti) 
1 can stewed tomatoes
Pinch of sugar
1 t parsley
1/4 t Pepper flakes
Cracked black pepper
1 qt. Chicken stock ( I used chicken base seasoning and water)  
2 c cooked left over pinto beans
1/8 c grated Parmesan Reggiano plus more for each bowl 



Brown meat balls.
Mash tomatoes and add to pot.
Make stock using water and chicken base, add to  pot.
Add celery, meat, pasta, cheese, all seasonings, beans, bay leaf and onions, add to pot.
Simmer for 30 minutes.
To serve add cheese to each bowl. 
Serve with crusty bread.

Pressure Cooker Red Wine Gravy Beef Stew

12 For the ministry of this service is not only supplying the needs of the saints but is also overflowing in many thanksgivings to God. - 2 Corinthians 9:11-12





1 lb. Beef tips sprinkled with flour
1 T olive oil
1 T Roasted garlic, mashed 
1 c Mushrooms, sliced 
1 Leek, chopped
1 T Celery, chopped
2 T Chicken base seasoning
Cracked black pepper
4 Potatoes, chopped 
4 Carrots, chopped
3 T of Cento tomato paste( in tube)
1 c Red wine (I used Cabernet Sauvignon)
1 c Water
1 T Fresh herbs, I used rosemary, oregano and sage mixture ( sprinkle on finished dish)


Place oil in hot pressure cooker, add celery, leeks, mushrooms and garlic.
Sauté until the mixture is tender, add lightly floured beef and slightly brown.
Add wine, tomato paste, seasonings and water.
Put on lid and build pressure, cook 30 minutes.
Take off pressure, remove lid and add carrots and potatoes.
Build pressure and cook 10 minutes. 
Sprinkle with herbs, serve with crusty bread.
