Okra Fritters




















3 if indeed you have tasted that the Lord is good.
4 As you come to him, a living stone rejected by men but in the sight of God chosen and precious,
5 you yourselves like living stones are being built up as a spiritual house, to be a holy priesthood, to offer spiritual sacrifices acceptable to God through Jesus Christ.
6 For it stands in Scripture: "Behold, I am laying in Zion a stone, a cornerstone chosen and precious, and whoever believes in him will not be put to shame." 
7 So the honor is for you who believe, but for those who do not believe, "The stone that the builders rejected has become the cornerstone," 
8 and "A stone of stumbling, and a rock of offense." They stumble because they disobey the word, as they were destined to do. 
9 But you are a chosen race, a royal priesthood, a holy nation, a people for his own possession, that you may proclaim the excellencies of him who called you out of darkness into his marvelous light.
10 Once you were not a people, but now you are God's people; once you had not received mercy, but now you have received mercy.

2 c diced Okra 
Salt and pepper
1/2 t Cajun seasoning
1/2 t Garlic granules
1 Shallot, diced
Egg
1/4 c Water
Mix well.

1/4 c Flour 
1/4 c cornmeal
1/2 t baking powder
Mix.

Add flour mixture into okra mixture.
Mix well.
Batter should be slightly sticky.
Place some panko on a plate.
Drop small spoonfuls into panko and coat all over.
Heat oil and fry.
I used my Fry Daddy.

Apple Mango Kale Mushroom Unexpected Cheddar Stuffed Pork Tenderloin

Pork tenderloin, I used golden Rotisserie flavor 1.5 lb., salted and peppered

Stuffing
1/2 of an opal Apple, chopped
1/2 of a mango, chopped
1/2 c mushrooms, sliced
1 c kale, chopped
1 shallot, diced
1 t Balsamic vinegar
1 t Honey
1 c Unexpected cheddar,crumbled, comes from Trader Joe's
Sauté all the ingredients except the cheese.
When tender, remove from heat and add cheese.
Set aside to cool.

Slit the tenderloin being careful not to cut through.
Pound to flatten, stuff, roll and tie with 5 lengths of kitchen string.
Sear in a large skillet in olive oil.
Bake preheated 350 degree oven until internal temp reaches 155 degrees.
Place on cutting board and tent with foil.
Let rest 15 minutes, remove strings and slice.

Zucchini Shallot and Onion Casserole

3 large zucchini, chopped
1 onion, chopped
1 Shallot, diced
2 T Cream cheese
1/4 c white sharp cheddar cheese
1/2 t Cajun seasoning
1 T Chicken base seasoning
1/2 t Garlic granules 

Topping
1/4 c BBQ pork skins, crushed
1/4 c Canned onion rings
1/4 c Mozzarella cheese

Steam onions, seasonings and zucchini in the microwave for 4 minutes.
Remove and add both cheeses, stir and cook 4 minutes more.
Drain, place in a greased pie plate.
Sprinkle topping on and bake 30 minutes in a preheated 350 degree oven.

BBQ Pork Skin Cheesy Low Carb Sausage Balls

These are lower carb but they taste like regular sausage balls.

1&1/4 c BBQ pork skins, process in food processor and pick out hard parts
2 T coconut flour
1&1/4 c cheese, I used sharp white cheddar
8 slices of pork breakfast patties
2 T buttermilk, whole fat
2 T mascarpone 

Process the pork skins, I did 9 of the Mac's BBQ 1 oz. size because I was going to make oven baked fried chicken.
Remove and place in a ziplock bag.
Measure out 1&1/4 c of the crumbs, pick out hard parts and add back to the processor.
Add the coconut flour, cheese, sausage patties, buttermilk, and mascarpone.
Pulse until the mixture comes together.
Roll into equal size balls.
Line jelly roll pan with parchment.
Bake in preheated oven for 400 degrees for 20 minutes.
There will be a lot of grease come out during cooking due to not using biscuit mix.
Just drain the balls on a paper towel.

Almond Bavarian Cream Twinkie Stack



















Isaiah 1

Box of twinkles, sliced lengthwise into thirds
Bavarian cream, recipe below
bananas, slice lengthwise
Jar maraschino cherries
Container of cool whip, large size
Sliced almonds 
Chocolate syrup

Bavarian cream
2 small boxes of white chocolate instant pudding
2 c heavy cream
1/2 c milk
1 T vanilla 
Beat with hand mixer and fold in 1 c cool whip

Layer cut twinkles in pan.
Next the bananas.
Next add 1/2 of the Bavarian cream.
Repeat and top with whipped cream.
Add cherries, almonds and drizzle chocolate.
