Spatchcock Rubbed Smoked Whole Chicken






13 And you, who were dead in your trespasses and the uncircumcision of your flesh, God made alive together with him, having forgiven us all our trespasses,
14 by canceling the record of debt that stood against us with its legal demands. This he set aside, nailing it to the cross. - Colossians 2:13-14





2 whole chickens, spatchcocked
Your favorite rub
Olive oil
Smoker
Wood for flavor, we used cherry


Spatchcock your chickens, that's just removing the backbone so it lays flat.
Wash and dry chicken.
Oil and add rub.

Smoke at 275 degrees - 300 degrees until an internal temperature of 165 is reached.
We smoked ours for 4 1/2 hrs.
These were delicious!!!

Fresh Strawberry and Fig Cobbler






Blessed is everyone who fears the LORD, who walks in his ways!  - Psalm 128:1





4 c Strawberries, quartered
5 oz frozen Figs, quartered
1/2 of a Meyer lemon, juice only
1/2 -1 c sugar, to taste
1 c water

Place water, sugar and lemon juice in pan and bring to a boil.
Add fruit and cook until the fruit resembles pie filling, around 20 min. 
Stir frequently.
Place in a 13x9 pan.
Follow cobbler top directions.


Cobbler Top
1/2 box of a white cake mix, sprinkle on top of cooked fruit mixture
1 stick butter, melted and poured on top of cake mix
Bake 45 minutes on 325 degrees.

Flat Noodle Peppered Beef and Cabbage Stir Fry






1 I lift up my eyes to the hills. From where does my help come? 
2 My help comes from the LORD, who made heaven and earth.

2 c Egg noodles, cooked and drained, set aside

1 c left over steak, chopped, I used filet
1 leek, chopped
1 red bell pepper, cut into thin strips
1 c shredded cabbage
1/2 t Butter-1/2 t olive oil mix
1 t Greek seasoning
1/4 c prosciutto, diced
1/4 c red wine
1/4 c heavy cream
1/4 c water
1/4 t sugar
1 T cream cheese
Salt and pepper to taste



Sauté leeks, bell pepper, cabbage, sugar, seasonings and prosciutto in butter-oil mixture.
Add steak, cream, wine, water, and cream cheese.
Sauce will begin to thicken and you can add the noodles.

8 oz. cheese curds, I found them at Sprouts

Batter:
Dry ingredients:
1 c AP flour
1 t baking powder
1/2 t salt
Whisk together.

Wet ingredients:
1 beaten egg
3/4 c milk or beer
1/4 c water
Whisk together.

Combine wet and dry ingredients, making a batter. 
Dip curds, drain on plate and deep fry in hot oil 1 minute.
These are the bomb!!!

Left Over BBQ Chicken Stir Fry

Jim n Nicks left over chicken from a whole chicken, chopped
1 t olive oil
2 carrots, matchstick cut
1 onion, sliced thin
1 t roasted garlic
1/2 cabbage, cut into strips
2 t Greek seasoning
1 t compound butter
Salt and pepper, to taste


Place oil in large skillet and heat.
Add onions, carrots,cabbage, seasonings, and garlic, stir fry until slightly tender.
Add chicken and butter. 
This dish came together very fast and was delicious!!!
