Shrimp Dan Dan Noodles






Romans 2:4
Or do you presume on the riches of his kindness and forbearance and patience, not knowing that God's kindness is meant to lead you to repentance?


1/2 of a box of angel hair pasta
1/4 c chicken broth(I use chicken base seasoning and add water) 
1 t cornstarch
1 1/2 t soy sauce
1 1/2 t oyster sauce

1/2 T sweet chili Thai sauce
1/2 T Hoisin
4 chicken tenderloin, cut into tiny bite-sized pieces 8 frozen Shrimp, tail removed
1 t roasted garlic
1/2 t fresh ginger
2 T scallions or leeks, sliced matchstick cut
1/2 c crushed sweet and salty peanuts
Salt and pepper to taste

Lightly sprinkle red pepper flakes

Garnish: crushed peanuts, matchstick cut cucumber slices Prepare noodles in boiling water and drain.
In a bowl, stir cornstarch into broth until dissolved. Add soy sauce, oyster sauce, hoisin and Thai sauce. Mix well.
Bring a oiled large skillet to medium heat. Add chicken, ginger and garlic. Cook and stir for about 4 minutes, until chicken is cooked through. Add shrimp, cooking until thawed. Don't over-cook.
Stir sauce mixture and add to skillet. Add noodles. Cook and stir until sauce has slightly thickened and noodles are hot, about 2 minutes.
Add salt, pepper and red pepper flakes.
Add cucumbers and crushed sweet and salty peanuts.

Easy Peach Ice Cream

The possibilities are endless!!!
2 heavy cream, well-chilled
1 c sweetened condensed milk 
1 cut and mashed fresh peach
With a hand mixer beat cream until it leaves trails of firm peaks in the bowl. Fold in the other ingredients.
Fill one 1-pint airtight container and freeze for 6 hours or overnight. Serve straight from the freezer.

Sweet Basil Cream Cheese Potatoes

For if someone comes and proclaims another Jesus than the one we proclaimed, or if you receive a different spirit from the one you received, or if you accept a different gospel from the one you accepted, you put up with it readily enough.


6 medium red potatoes
2 T cream cheese
1 T chicken seasoning base
1/4 c heavy cream
1/4 c fresh chopped sweet basil


Boil chopped potatoes in water seasoned with seasoning base until just about all the water is cooked out. Potatoes should be fork tender. Remove from heat. Add all the rest of the ingredients except basil, stir leaving potatoes chunky. Add basil.

Butter Sautéed Parmesan Leeks And Asparagus






2 Cor.11:
14 And no wonder, for even Satan disguises himself as an angel of light.
15 So it is no surprise if his servants, also, disguise themselves as servants of righteousness. Their end will correspond to their deeds.






1t butter
1/2 t olive oil
1 lb. Baby asparagus 
1 Leek, sliced
1 clove Roasted garlic
2 T Parmesan Reggiano
Salt 
Pepper
Good size sprinkling of Parmesan and Romano cheese


Add butter and oil to skillet and heat, then add the leeks and garlic. 
Now add asparagus tossing in butter oil mixture, salt and pepper.
Continue sautéing on medium heat until asparagus begins to lightly brown. Add the Parmesan Romano and it's ready. 


EJ's Marinated Catalina Chicken Wraps





Col.3:9-10
9 Do not lie to one another, seeing that you have put off the old self with its practices
10 and have put on the new self, which is being renewed in knowledge after the image of its creator.

This turned out great, made a wonderful wrap and the chicken was so moist and flavorful! You could use this marinade for shrimp too!

Marinade
1 bottle of Catalina dressing 
1/2 c white wine
1/4 c lemon juice

Marinate pounded thin chicken breast for 2 hours. Drain well.
Salt with smoked salt and coarse cracked pepper.
Pan sear in a tad of olive oil.
Cook on a rack in a foil pan with water and white wine. Bake in convection oven for 16 minutes on each side.
Turn on broiler and blacken a little.
Thin slice on the long side.
Serve as a wrap or on Naan bread.
Add lettuce, Vidalia onion and a drizzle of Ranch dressing!
