Beef Wellington Pastry Puffs

2 c cold Shaved Beef Tenderloin ( I make my own)*

Chop and Set aside



1 pkg non frozen puff pastry( Aldi)

Keep really cold and cut in 2 long strips

1 beaten egg for sealing puff



Cold Veggie medley 

1 c Mushrooms, diced 

8 black Olives, diced 

1/2 t capers, diced

Mash and set aside



Cold DIY Herb Boursin 

3 T Butter

3 T Spreadable Cream cheese

1 t Roasted Garlic

1/2 t Dried Chives 

1/2 t Dried Oregano 

1/2 t Dried Thyme

1/2 t Dried Parsley 

1/2 t Dried Basil

1/2 t coarse black pepper 


Have all components cold

Divide Pastry in half using a pizza wheel and spread Boursin down middle of strip

Add veggie medley on top of Boursin 

Top with chopped beef

Brush all the sides with egg

Roll to side, pinch ends first then sides

Place on parchment, seam side down, 

cut 8 Puffs out of each strip of Pastry dough with a pizza wheel 

Transfer to parchment lined sheet pan

Bake preheated 400 degree oven for 25 minutes until golden brown 

Serve with spicy honey mustard
