3 Wing Sauce Recipes

10 brined cooked wings for each sauce*


Hot Honey Mustard

1/8 c Honey

2 T Texas Pete (more if you want the hotter)

1 t yellow mustard


Buttery Lemon Pepper

1/4 stick salted melted butter

2 t lemon pepper seasoning

1/2 t lemon powder or 1 t fresh lemon juice


Chinese 5 Spice

1/8 c Soy sauce

1/2 t (5) spice powder 

1/2 t toasted sesame oil

1/2 t hoisin 

1/2 t honey 

1/2 t sweet chili Thai sauce

 

Just toss 10 wings in each sauce!

Brined and Air Fried Wings

































Psalm 29:11


    [11] May the LORD give strength to his people!

        May the LORD bless his people with peace!


These can be eaten naked or sauced

I made three sauces

Hot Honey

Chinese Five Spice

Buttery Lemon Pepper 

 

 

 

1 qt water 

3 pieces Parmesan rind 

2 T kosher salt 

1 T sugar

2 T peppercorns 

2 medium lemons, cut in half

3 T roasted garlic 

2-3 bay leaves

4-5 lbs chicken wings, cut

2 T extra virgin olive oil

Boil 10 minutes

Cool down and add ice to speed cooling 

Using large container add wings and pour brine over wings

Brine 4-6 hours but no longer


To cook, remove wings from brine, dry off wings

Brush with olive oil, both sides

Cook in batches

Air fry 400 degrees for 20 minutes on one side flip and cook an additional 20 minutes

1 stick softened butter

3 t red pepper jelly

1/2 t red pepper flakes


Mix form into log, freeze on refrigerate 

Delicious on cornbread

4 Chicken patties made from Meatball recipe *

2 Maple honey ham slices torn in half

2 Maple honey turkey slices torn in half

4 Pepperoni slices

4 slices Havarti cheese

4 Hawaiian Brioche Slider buns

Onion slices

Tomato slices


Special sauce 

1 T Mayo

1 t yellow mustard 

1 t BBQ sauce

Meatball ingredients 

1 lb ground chicken 

1/2 pkg mortadella, process in mini food processor until fine

1/4 c (3 cheese Italian blend)

1 small Shallot, diced

1 t dried Rosemary 

1 t dried Thyme 

1/2 t dried Oregano 

1/2 t dried basil

Salt and pepper to taste

1/4 c Panko

2 T Tomato paste concentrate 

3 T heavy cream

Mix by hand until they just come together 

Place in freezer 30 minutes 

Makes 4-6 Sliders 

Fry in skillet

Dry Pan Roasted Salted Peanuts


































1 Corinthians 10:26


[26] For “the earth is the Lord’s, and the fullness thereof.”



This worked great!


2 c raw shelled peanuts with skin on

4 c kosher coarse salt 


Before roasting rinse peanuts with water and drain.

Set aside.

Place salt in cast iron Dutch oven and heat on #4 setting on gas top burner.

Must stir constantly with a long wooden spoon.

When salt gets warm to touch, add peanuts. (just lightly touch cause it's scalding hot) 

Stir constantly for 11 minutes.

Remove pan from heat.

Using a large spider gently shake to remove salt.

Place parchment on sheet pan and place the peanuts there to cool.

Reserve salt to do next batch of peanuts.


Did whole pecan too and it took 7 minutes!
