Boars Head Pepperoni Hash Cheese Grits Bowl



























 

 

 

Psalm 119:123-125

2 c chopped pepperoni 

6 small Yukon Gold, microwave, covered 2 min each side, cool and chop

1 sweet onion, chopped 

Olive oil for sautéing 

Sauté potatoes in oil till slightly browning, add onions and pepperoni.


To serve:

Grits

Hash 

Avocado

Egg



Batch of cheese grits(I used white American and Munster to equal 1/2 c)

Avocado creama 

Fried hard egg



Avocado creama recipe

1 avocado, mashed with fork 

1 T mayo

1 T sour cream

1/2 t toasted cumin powder

Pinch of sugar 

A squeeze of 1/2 of a lime

Salt and pepper

Stuffed Baked Potatoes





























 

Psalm 119:114


    [114] You are my hiding place and my shield;

        I hope in your word.



6 baking potatoes, baked, split in half lengthwise and cooled

Inside potato scooped out

Reserve crispy skins


Filling

Potato scooped out

Sour cream 

Half and half

Salt and pepper

Garlic granules 

2 Cheese shreds, I used Gouda and white American 

Mix, should be creamy but thick.

Over stuff crispy skins with filling.

Bake preheated 450 degree oven for 15 minutes.

Next time I'll add chives to the filling.

Leek and Mushroom Gravy Smothered Chicken
































Isaiah 63:9

An ej original recipe!!



4 large chicken breast cut in half lengthwise, salted with coarse kosher and peppered, dry marinate for 2 hrs in fridge, this is a dry brine for tender and moist chicken


1 c Italian 4 cheese blend, divided


Dredge

2 Beaten eggs


2 c Italian plain bread crumbs

1/8 c Cornstarch 


Dredge chicken in egg, drain, then into breadcrumbs.

Using 2 T bacon grease, 1/8 c olive oil and 2 T clarified butter, heat.

Fry 5 minutes, in batches, on each side or until chicken is crispy.

Place in foil pan.

Sprinkle chicken with cheese.

Add 2 T of gravy to each chicken piece.

Place in a preheated 350 degree oven for 20 minutes or until chicken internal temp is 165. 

Serve.


Gravy 

1/8 c Leeks

1/8 c Mushrooms 

Salt and Pepper to taste

1/2 t Thyme

1/2 t Rosemary 

Pinch of sugar

1/4 c Sauvignon Blanc 

1/4 c Italian 4 Cheese 

1/4 c Half and half


1 T bacon grease, 1 T olive oil and 1 T clarified butter 

Sauté Leeks and mushrooms.

Add herbs, sugar and salt-pepper.

Next add wine, slightly reduce.

Add half and half and cheese.

Sauté until your desired thickness.

Spoon a little over cheese-chicken.

Reserve most of the gravy for mashed potatoes or rice.

18 Minute Air Fryer Bone In Chops

An ej original recipe!



4 bone in pork chop, 1-11/4 inch thick 

Using shears cut 3 slits through fat that's around the edges.

Set aside, on counter for at least an hour.


Seasoning

2 t coarse kosher salt

1 t black pepper

Mix, sprinkle both sides of chops, press in


Additional seasoning

1 t smoked paprika 

1/4 t garlic granules 

1/4 t onion granules 


Preheat air Fryer to 400 degrees for 5 minutes.

Cover pan with foil.

Add chops.

Cook 8 minutes then flip and cook an additional 8-10 minutes, reaching a temp of 150 to 155 degrees.

Tender and juicy goodness!!!

Cheese Grits(I used quick Grits)

1/8 c Italian cheese blend

2 T Cheddar 


Topping

1/2 c Sausage chunks 

2 chopped Scallions

1 crumbled Potato patty*

Finishing 

Fresh chopped salted tomatoes in Olive Garden Italian dressing


Avocado creama 

Mash avocado, add 1/2 t Mayo, salt, toasted cumin and pepper.

Squeeze 1/2 of a small lime over mixture and mix.

Set aside
