Brown Sugar Mustard Smoked Turkey



































Job 9:25


    [25] “My days are swifter than a runner;

        they flee away; they see no good.



1 smoked turkey ( already thawed, mine came from Sam's)


Turkey size baking bag

1 t flour

1/2 c Yellow mustard

1 c Brown Sugar

Mini coke



Preheat oven 375 degrees.

Set timer for 1 hour 30 minutes or until temp reaches 145 degrees in multiple spots.

Place flour in bottom of bag.

Smear mustard over top of whole turkey.

Pat brown Sugar over mustard.

Place turkey in floured bag.

Add coke mini. 

Tie bag, cut 2 slits in top.

Place in heavy bottom pan.

Place on bottom rack.

Cook to internal temp of 145 degrees.

Check with thermometer in several places.

Salted Butter Caramel Cinnamon Rolls

    [15] where then is my hope?

        Who will see my hope?



Preheat toasted oven to 375 degrees.

After preheat, set cook time for 45 minutes.


 

1 can of store brand cinnamon rolls, reserve frosting that comes from cinnamon rolls.


Separate into a 9x9 pan, leaving space between each one.


1/2-3/4 c Heavy cream 

Lightly pour around edges and in between each roll.


Mix the following,

1/2 c Brown sugar

1/2 c Melted Butter

Pinch of Kosher salt

Slowly pour over rolls.


Seal in foil.

Place in preheated oven.

After cook time, cool 5 minutes, then frost.

Spoon all that salted butter caramel goodness over each roll and serve.

A cup of coffee was delicious with these!!

Ground Soffritto White Wine Chicken Sliders

An ej original recipe!



1 Lb ground Chicken 

1/4 c plain bread crumbs 

1 t Soffritto seasoning (Trader Joe's)

1/2 of a thinly sliced Leek

Salt and pepper to taste

1/4 t each dried rosemary, thyme and oregano 

Splash of buttermilk

1/4 c 3 Cheese Italian blend


Make into slider Patties.

Drizzle a tiny bit of oil.

Fry 3-4 minutes each side.

To finish, drizzle Sauvignon Blanc over both sides.

Check for a temp of 165 degrees.


To serve toasted brioche roll with Munster cheese, thin sliced tomato and avocado creama.

Quick Hot and Sour Soup


































Ezekiel 16:62-63


[62] I will establish my covenant with you, and you shall know that I am the LORD, [63] that you may remember and be confounded, and never open your mouth again because of your shame, when I atone for you for all that you have done, declares the Lord GOD.”



4 c chicken bone broth

1/4 c ponzu sauce

1 T sushi ginger, diced

2 T honey, plus more to taste

1 t chili garlic sauce

2 T roasted garlic

2 scallions, thinly sliced, white and green parts separated

5 Button mushrooms, sliced  

1/4 c  rice wine vinegar

2 T cornstarch

1-2 c Firm Tofu cut into strips

1/2 t toasted sesame oil

Fresh cilantro



Directions

In a large pot on medium-high heat, add the broth, ponzu, ginger, honey, chili garlic sauce, garlic, button mushroom slices and scallion whites. Stir and taste immediately; if needed, add a bit more honey to balance. Bring to a boil, then reduce the heat to maintain a simmer. Cook for about 15 minutes to allow the ginger and garlic to steep in the soup for flavor.

Add tofu strips.


In a small bowl, whisk the vinegar and cornstarch until smooth. Raise the heat of the soup and add the cornstarch-vinegar slurry. Whisk until the soup slightly thickens, within a minute or two.

 

Garnish each with the scallion greens, a few drops of sesame oil and the cilantro, if you like. Add crunchy won tons for serving.

Serve with egg rolls.

Baking Bag Seared Seasoned Pork Chops and Potatoes

An ej original recipe!

 

 

4 bone in 1 inch thick Chops, season with meat tenderizer, smoked paprika, thyme and rosemary, sear in oil

4 medium microwaved Yukon Gold, 3 minutes each side, peel, cool and quarter and season

1 chunked onion, season and microwaved 2 minutes 


Large baking bag

1 T flour

1/4 c Sauvignon Blanc 

1/4 c water

Add to large baking bag.

Place seared Chops in bag, place potatoes and onions around.

Be sure Chops are flat.

Cinch bag, snip 3 slits in top. 

Bake on a sheet pan in a 350 degree preheated oven for 25 minutes. 

Test with thermometer for a temp of 155 for doneness.

Delicious!!
